Waffles made with coconut oil and coconut flour
These waffles are made with coconut oil and coconut flour replacing some of the white flour and all of the butter. They were cooked on an electric (sunbeam) waffle iron. I cooked some, light brown for heating in the toaster for breakfast, and some cooked fully to eat for tea.

1 1/2 cups of S.R. flour
1/2 cup of coconut flour
3 eggs
50g. of coconut oil
3/4 cup skim milk
1 1/4 cups water
1/4 cup sugar
Place all in TMX bowl, zap for30 sec., speed 7

Check that it is well mixed, if not scrape down and give the mix 10 more seconds.
can be used immediately or kept in fridge for 2 days.

katesjoy - you can make coconut flour.  When you make coconut milk, spread the leftover pulp onto a baking sheet and bake until dry in a 200 degree oven and then grind in thermie until fine powder.

I've never made waffles. Probably because if I did I would eat them with lots of lovely icecream and syrup. I love them.
May all dairy items in your fridge be of questionable vintage.

Yummy Chookie, waffles or pancakes are a Sunday favourite in this house  :D

I always make some a little undercooked and put them in the freezer to cook in the toaster. Especially if I have made more healthy ones (ha ha because they are the ones that are left over lol)

How did you make your coconut flour - did you just use shredded or desiccated coconut?

Thanks Chookie.  They look great on the blog - actualy pointed Maddy fro the British Larder to your blog for  look.

faffa_70 - it comes in packets already prepared. MrsT bought some about 2 years ago and I had only used it sparingly in pancakes as I mistakenly believed it was probably bad and full of fatty things  ;D ;D - dummy me.  It is healthy stuff

What options are there if you don't have a waffle iron?

dgg9879, don't know to both questions.  Sorry.   Where do you live.?   It is just that Sunbeam in Australia sell electric Waffle Irons pretty cheap.

Fingers in ears going la la la la.................Chookie don't tell me that. I've always wanted a waffle maker but never bought one. I think I will try and resist as more yummy food is the last thing we need in this house.
