Banana Spring Rolls
« on: December 08, 2011, 11:06:10 am »
This recipe is adapted from "Ask Sarah" Sarah Johannsen on Facebook and youasksarah.com

I haven't worked out how to make my own spring roll/rice paper yet, so bought stuff it is! Also, this may not be suitable for this section as only 1 component is for the TMX so feel free to move it to the non-thermomix recipes if you need to. :)

Name of Recipe: Banana Spring Rolls
Number of People: 4
Ingredients:
2 Bananas
100g Dark Agave Nectar (Maple Syrup, honey or golden syrup would also be ok)
8 Spring Roll Wrappers (I used Vietnamese Rice Paper)
50g Raw Sugar
Grapeseed oil for shallow frying

Preparation:
Put sugar in TMX and blitz speed 6 for 10-15 seconds to make icing sugar
Cut Bananas in half and then slice horizontally
Soak Rice Paper in water
Meanwhile heat a small amount of grapeseed oil in frypan
Lay rice paper on paper towel or clean tea towel
Lay banana in rice paper and roll as if you were rolling a spring roll/cold roll (roll from bottom, fold in sides, and keep rolling)
Shallow fry in grapseed oil
Serve while hot with sprinkled icing sugar and your choice of syrup or icecream if you are being really naughty!
Makes 2 each
Picture does not do it justice!

Stephanie - Yum - I made these last year when we had a glut of bananas - they are also really good with cinnamon added to the sugar.  As an added bonus, they are gluten free!

JD - You could probably add some Nutella in with the bananas too.

Yum Yum!!

I learned how to make my own rice paper wrappers in Vietnam at a cooking school. Honestly, it's much easier to just buy them!!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

My mouth is watering just looking at the picture. Nice now when bananas are a little cheaper too.
May all dairy items in your fridge be of questionable vintage.

Fundj you could use any oil except olive of course. I just used grapeseed oil as it's flavorless and one of the healthier options :)
