They certainly look interesting, Katie!  Everyone is certainly getting very adventurous with this challenge.  That's what I like about this forum, it gives you the inspiration to experiment.

Katie's pancakes were lovely, just call them strawberry flavoured if you have non-beetroot lovers in your house.  I'd be surprised if they'd pick a beetroot flavour.

You amazing ladies. there are so  many new recipes here that I can't wait to try them. I'm almost tempted to go out for mushrooms, I wont though and will get some tomorrow.

Pinwheels. What another brilliant idea.
This is the vegie soup I made using a Beetroot as part of the veggies. I used Italian soup mix in it and cooked it in the HMP, but cooked it too long so it became very thick. It still tasted nice though.
May all dairy items in your fridge be of questionable vintage.

Not feeling particularly A1 today so cooking may be on the backburner until all settles down  :-)) - really enjoying seeing what everyone else has contributed!!    I've earmarked some beetroot recipes that I'm keen to try "in the fullness of time" (love that old expression!) but came across this one this morning . . . a beetroot curry.  I think I even have all the ingredients except for one or two of the spices.
