COOK THE PERFECT SPUD W/ HESTON BLUMENTHAL

I used to think this man was simply not on the same planet as I was - or even in the same universe ;D . . . but after watching some of his recent shows and reading articles like this I think he's a genius!  What do you think?

i do the boiling part, but not the rinsing part will try it the next i do roast pots
i don't need a recipe i'm italian

If I am doing roast  potatoes I peel them & leave them in water for at least an hour.

I always par boil potatoes before roasting but will have to try letting the steam out before roasting next time.
