Yesterday I was asked for a very simple recipe for the Probus Newsletter. This is what I sent. This was served for afternoon tea, at Bishopscourt in Melbourne. The official residence of the Archbishop of Melbourne. 1 square jam filled lamington A generous swirl of cream A large strawberry, sliced to fan out. 5

4 more small pots of mandarin marmalade. Made in TMX. Chicken and rice from my blog. Makes plenty of tasty rice. Will have leftovers with prawns today.

Making Cottage pie from leftover lamb roast. I minced the lamb in the TMX. I made extra gravy. Made mashed potato in the TMX. Will add some peas and carrot to the mixture to make it bit healthier.
More bottled apples. The skins and cores from the bottled apples are boiled and liquid strained. I use this liquid instead of water in the jam and marmalade. It’s loaded with pectin. 8

Salad, leftovers. Made a large Lasagna for lunch. Baked apples stuffed with Pecans and Sour dried cherries and dusted with sugar and cinnamon. 12

KAtie, take care of yourself. The others can manage for a while without you rushing around.
Had hair perm yesterday ( hair dresser going to buy an TMX 7) and flu injection and then had a ‘me’ day. This consisted of reading a couple of recipe books and book for book club, , visiting a couple of shop that I’ve been meaning to check out for months. Tidied up the study, visited the Pathology center to make appointment and collect sample containers. Can’t believe I did all this.!! Cookie, what a beautiful little bird. Judy, have you seen the little sachets of sauces for FODMAP? Very handy. 14

I’m cooking myself a roast lamb lunch so I can make the Ballarat kids cottage pie. They are batching for 3 weeks as DD has gone north to establish the tooth cleaning program for the island kids. Looks like I’ll have GC for dinner quite often.

All sounds yummy. Go girls.
Going to turn the Spag Bol sauce into a large lasagna. Will use RTE white sauce and add a layer of cooked silver beet. ( part of my effort to eat something from my small garden every day). Melbourne family coming for lunch. Baked apples stuffed with walnuts and sour dried cherries, dusted with cinnamon sugar. Yesterday bottled apples in microwave. 6 jars. |
