CP - if you get a chance, would you be able to post a photo of the brand/type of noodles you use in this recipe please?  I tried this tonight, and while the flavours were delicious, the noodles I used turned into one big gluey/gloopy/solid mess in the middle of the wok  :P

I don't know if I used the wrong type noodles, or if they were "overcooked" in the boiling water beforehand.

The kids loved it nevertheless, and I want to make it again, but want to try different noodle.

I made this delicious recipe again for dinner tonight.Left the seeds in the chillies this time and survived :D :D :D

I love this and make it at least once a fortnight. It's good to have a bit of a chili bite but not if you have to keep towelling yourself down  ;D Karen I've just seen your question, I use Hokkien Noodles from the fridge section. Thre are some instructions on the packet. I also some Singapore noodles packaged similarly down the International aisle, but I sort of probably like the idea that the fridge ones may be fresher???

I prefer the fridge ones CP. Found a nasty in the shelf ones once.

We had this for dinner tonight, we loved it. I hadn't toasted the cashews so just threw them in with the chicken. I made the noodles in the pasta maker. We will definitely be having it again.

cookie, you can toast the cashers in the AF or sometimes depending upon your time and how you feel towards the toasted/crunch or untoasted more raw flavour. (I do prefer the toasted). I really love this recipe using the Hokkien noodles, and have yet to find another that I really like. Does anyone have another favourite using another meat etc?
