Not so much what I am cooking today, but what I cooked last week. I made thermoconvert's sweet chilli sauce. Anyway, chillis and I don't get on particularly well which meant that I couldn't taste test the finished product so I gave my neighbour a jar and he emailed me on Monday to say he had really enjoyed it and I could pipe the sauce over to his place! Guess that means it was pretty well a great success.

I love that he didn’t just say it’s great, he said to pipe it over.
Yesterday I made Nigella’s Chocolate and Pepita biscuits again. They are very nice.

Mab the shortbread looks very, very yummy.
Judy, I put my umami into iceblocks and just throw one in. I guess it’s about a tablespoon.

Thanks cookie. Today I’ve made the meat base for RTE’s Cottage Pie which everyone raves about. Hopefully SIL will love it too when they come over next week. I had some leftover beef stock so I made a veggie, oniony soup which I may or may not like.

A batch of pear and almond fruit mince to go into a fruit mince slice which is now made, Spanish bean stew, Tomatoey smoked chickpeas and a Macaroni salad. Admittedly not all cooked today - some was yesterday. This lot should keep us going for the week.

Yesterday I made 2 cookies and cream fudge, 1 x chocolate mint fudge, and two fruit tea loaves made with mixed fruit with cranberry and apricots in.
Today I’m making a bolognaise base, and kedgeree from the remaining smoked basa fillet along with a delicious batch home made baked beans, these freeze well. Some of these are for me, and some for my neighbour who visits her husband in hospital 25 m away every day and has done for months. I’m away next week and making sure I leave her extra meals this week.

That's very thoughtful of you DJ, I am sure she appreciates it. I also send a meal over to my neighbour each week which he says is a god send.
I just thought I would throw the pear and almond fruit mince I made at the weekend into the discussion as it was really lovely ... sweet but tasty. I have always hated fruit mince because when we were kids my mum made fruit mince tarts each Xmas with commercially produced fruit mince and they were foul, but we had to eat them! It has taken me 60+ years to accept there are much tastier options!

I love Cookies grans Fat free fruit mince.
Today I packed up 14 bags of Nuts and Bolts.
I made Helen Gohs All Bran muffins. These are well worth making. They tasted very nice even though I forgot the coconut oil.
I’ve been given a jar of Apricot Jam and a recipe to use it with chicken. I’ll report how it tastes after I’ve tried the recipe tonight.

I always make the fat free fruit mince Chookie. I even have the left overs with yoghurt after Christmas as it makes a lot. It also keeps for ever.
I made some Macadamia and Cranberry biscuits today.

I don’t particularly like muffins. Don’t know why. But these I’ll be making often. The 4 people who tried them loved them. I made the liquid mix in the TMX so will post the recipe.

I didn’t know what my last guest had for her breakfast so I bought a packet of English muffins on the assumption that everyone liked them. She had never had them before but really enjoyed one each morning and was going to buy some herself once returning to her home. I used up the leftovers by making some muffin pizzas for the kids.
