Roasted Sweet Potatoes with Salsa

Roasted Sweet Potatoes With Salsa - serves 4

2 large sweet potatoes
200 gms feta - cut into cubes and fold into the salsa at the end
 
Salsa ingredients
1/2 cup pitted black olives
1/2 red onion
1/2 red capsicum
1 clove garlic
2 tomatoes
1 bunch coriander or basil
1 tsp ras el hanout


Topping
4 rashers bacon, chopped and fried crisp
sour cream

Scrub sweet potatoes and place on foil lined tray.
Bake at 180oC for 1 hour or until soft.
Place salsa ingredients in TM and pulse on Turbo once or twice, checking until desired consistency.
Halve and split sweet potatoes, cover each serve with generous amount of salsa, top with sour cream and bacon bits.

tips - I use light sour cream, so this delicious meal is practically sin-free and the kids love it!

brazen - this was a hit at my pot luck dinner party I went to tonight! I'm warning you though, be very careful not to pulse the salsa too many times, especially if you have soft feta.... it may look like something the cat brought up.

Amanda - I think that I cubed the feta and put it in at the end!

It is a blend of herbs and spices from the middle east or North America.  Probably can buy it under that name or just substitute it with Moroccan spice I guess.  Amanda may be able to answer this one better than me.

It is a blend of spice from the Middle East.  Ras el Hanout roughly translates to 'top of the shop', ie a favoured houseblend.
It is easily made from scratch - especially in the TM!  There are recipes in Claudia Rodens Middle East cookbook and also on www. recipezaar.  it can also be bought from "Herbies" online or at their shop in Sydney.
It is very fragrant and adds a wonderful flavour to lots of things that I use it in.
Please, please don't use a supermarket brand Moroccan mix - they seriously don't come close to the real thing and are not fresh enough.

LOL i thought about crumbling it in but the recipe said to put all ingredients in the thermomix lol
