Spinach Risotto

I fancied spinach but I also felt like risotto.  So I combined the risotto recipe from Jeden Tag Genießen and a recipe that I found for Spinach Risotto from www.epicurious.com.  Unfortunately, I did have to use the induction cooktop to defrost the frozen spinach. Honestly, it was the first time I have used it since Thermie's arrival. The risotto was absolutely delicious - I hope you enjoy it too.

Spinach Risotto

Number of People: 2+

Ingredients:

450g Frozen Spinach
100g Parmesan Cheese
1 large onion, peeled and halved
25g EVOO
250g Arborio Rice
150g White Wine
700g Liquid Stock - I used homemade chicken stock, try vegetarian?

Preparation:

Remove frozen spinach from pack and in a pot on the stove,  cook until it defrosts and most of the liquid has evaporated.  

Place parmesan cheese into  *: 10 secs on speed 10.  Remove and place to one side. Rinse  *: .

Add onion to  *: and chop 3 secs on speed 5.

Pour in EVOO and cook for 3 mins on speed 1 at 100˚.

Add arborio rice and cook for a further 3 mins, speed 1 at 100˚.

With white wine and hot stock, combine in  *: and cook for 22 mins on  :-: speed 1 at 100˚.

Using the spatula to assist, stir in cheese and cooked spinach by hand.

Cook for 2 extra mins,  :-: speed 1 at 100˚, or until all ingredients are combined.

What an easy recipe for a quick meal Lee - all ingredients on hand.  I would have to use chopped fresh spinach from my garden, adding it for the last 5 - 8 minutes of the cooking time. Thanks for the recipe.

Lee,  like the look of this recipe as it is made with the things always on hand.  Lie Judy would use Spinach from garden.  Thanks

Sorry Lee, not enough out there to share at the moment ;)  I made your risotto today, boy you guys must have big appetites - it did us for lunch and tea and there is still a small serve left.
I didn't have enough spinach so I cleared out the fridge and made up the quantity with a bit of broccoli, some beans and asparagus ends.  Cooked it for just 15 minutes once the wine, stock and vegies (apart from spinach) were added. I shredded the fresh spinach and poured boiling water over it then added that with the cheese with a further 2 minutes on the clock. I reduced the parmesan cheese to 50g as DH is not that fond of it and I can get away with it in smaller quantities.  Sprinkled some freshly grated parmesan over mine before serving.
Very tasty - I am slowly starting to enjoy these risotto meals.

Lee you could always defrost the spinach in the varoma instead of using the cooktop  ;) ;)

made this last night, have never liked rissotto much, wanted a quick and easy
meal. I love spinach but my dd and gd not so much,
I must say it was delicious and gd wanted more ;D
then dd tried some and she ended up having a bowl full.
this one I will be making again ;D

I hope you enjoy it.  I used all my spinach on a pizza yesterday.  It's funny actually.  I took a pizza to a friends birthday, as I just wanted to be nice and help out a bit.  And guess what?  Someone wants to know a little bit "more" about Thermomix.... So they are coming to my house and I will let them cook with me.  Bet they buy one too!!  He he he he!!!!!!
