Marbella chicken legs , from Simple cook book . Dates olives capers garlic parsley bay leaf vinegar wine and treacle ! Ready nice with baked sweet potato and vegetables.

Roast eye fillet of beef ,roast vegetables. Mm the wind rower gets this for dinner too , he doesn’t eat veg so just potatoes for him I suppose!

The Little Gem lettuce have grown very well.  We are eating a lot of salads. Made a Apricot and French Onion soup Chicken Casserole with lots of added veggies. Will serve with brown rice and salad.

Tonight we’re having my version of the dish that was on Tik Tok or somewhere or other. It’s tomatoes, feta, chilli and pasta. Oops Basil too.

Judy, that recipe is very like one DH loved (several times!) when we were in Venice a few years ago.

Making a huge pot of a new chilli recipe, a vegan stroganoff and preparing a trifle with mango custard for our staff Xmas party on our rooftop tomorrow night - weather permitting.

I had it with a pumpkin sauce last night Marina and tonight it will be with a zucchini/tomato sauce. It makes for a very quick meal when you already have the sauces made and frozen so I’ll make another batch of the pasta and freeze that in packs as well.

We will be having something light. We had our car club Christmas lunch today. I think the caterer may have a thermomix as some of the salads looked very familiar and the gravy was in a thermoserver. It was fairly nice. At least I didn’t have to cook it or do the dishes.
