I've been looking through my collections of recipes for the TMX and came across this one. It's a mixture that you make up and keep in the fridge until you need to make a cake. Then you just add the wet ingredients and bake it.
I don't know if it's already here somewhere, but thought it was a great idea.
THERMO CAKE MIX150g sugar
Process for a few seconds to make castor sugar.
210g plain flour
2 tsp baking powder
Process for a few seconds to aerate.
2 Tbsp powdered milk
125g butter cut into pieces
Add the above and process on speed 6 for about 3 seconds or until mixture looks like fine crumbs.
Store in the fridge in an airtight container for up to three months. When ready to use, leave out until it reaches room temperature. and reconstitute as follows:
For a basic vanilla cake, add:2 eggs
1 tsp vanilla
1/2 cup water
Process on
until incorporated and bake as normal.
VARIATIONSCoffee and Walnut Cake2/3 cup walnuts - chop for a few seconds on speed 5. Remove.
1 Tbsp instant coffee powder
1/2 cup hot water
Dissolve powder in water and allow to cool before adding to mixture. Add walnuts to mixture or reserve for icing.
Mocha Frosting1 Tbsp cocoa
1 tsp instant coffee powder
1 Tbsp boiling water
Dissolve in TMX. Add
1 1/2 cups (sorry, haven't weighed this yet) and mix on speed 5.
Chocolate CakeDissolve 1/2 cup cocoa in 1/2 cup boiling water.Let cool to room temps before adding to dry mix.
Lemon or OrangeSimply add zest of fruit and squeeze out juice. Make up juice to 1/2 cup with water.
I remember this working really well. I have a mix in the fridge now. When we've eaten our Chocolate Bimby Cake, I'll make this one up.

Deep 20cm Round Tin - 50 minutes
24 Patty Pans - 15 minutes
14 x 21cm Loaf Tin - 1 hour
2 26 x 8cm Bar Tins - 35 minutes
