What are you cooking today?

Yum Mab.
A few days ago I tried to make some fudge rocky road biscuits. They had crunched up Reece’s Peanut Butter minis in. Also marshmallows. The both leaked out but apparently the biscuits taste nice.

I also made a batch of pickled red onion from The Passionate Pantry.

When I went out to the bread place some time ago I bought a couple of 500g bread mixes. One was Pumpernickel and another Cheese and Onion. I made the first into a loaf and the second into some rolls for DH’s lunch. Both are nice.

I had a bit of a cook up tonight to top up my freezer meals and feed me for the rest of the week.
Tuna mornay, crustless broccoli quiche, Parmesan radish bake and creamy mushrooms.

Nice baking cookie, is the Pickled red onion nice?

Another busy weekend in the kitchen.  Vege fricasse with cauliflower mash, vege stew, green shakshuka and French onion dip sauce to go on spiralised zucchini and carrots (the sauce made from scratch no packets involved) and "Cowboy Beans".  Hopefully that will all see us through the bulk of the week.

Lovely meals Marina. This morning I made a batch of Tenina’s Caramelised garlic and later today I’ll be making a Walnut pesto from the same book For Food’s Sake. A Keto noodle-less chicken soup is on the plan too.

Made Cauli soup.  Just cauli, homemade chicken stock and 2 soup cubes. Cooked TMX 100 degrees for 20 minutes then 30 seconds Speed 9.  Enough for 3 meals.
Microwaved a large potato. Cut in half, mashed soft center, mixed with milk and Parmesan and baked in AF. Accompanied roast chicken and silverbeet from garden.

Do you still get the lovely crispy skin on the baked potato with the AF?

Today I picked up a cauli for $2 and although I already had one at home from last week’s shopping, this was even fresher than that one. I’ve put 5 small bags in the freezer and kept one out for lunch tomorrow plus a few bags of riced cauli as well and I still have a decent chunk plus the other one. Going to try keto cauli wraps tomorrow and I could also make a cauli pizza base depending on how I feel. My freezers were always full and I’ve managed to get them down, now the fridge is bursting at the seams.

You will have something for when you can't be bothered Judy.
I made a pumpkin soup this afternoon for tomorrow night's dinner.

Yes cookie, I do like to have plenty of ready meals in the freezer for when I’m late home and can’t be bothered cooking although I’m enjoying it at the moment.
