Potato, Feta & Mint Pasties or triangles

Name of Recipe: Potato, feta & mint pasties or triangles converted from kidspot.com.au
Number of People: Makes 12
Ingredients:

1 onion, cut in half
1/2 tsp garlic paste
1 tbspn olive oil
3 sheets puff pastry, defrosted
300g cold mashed potato with no added butter or milk
100g feta, cubed
2 eggs, lightly beaten + 1 extra for glazing
2 tbsp fresh mint, chopped finely

Preparation:
Chop the onion 2 sec/speed 5.
Add the oil and the garlic paste and sauté 4 mins/varoma temp/speed 1/reverse.
Spread on a plate to cool slightly.
Without cleaning the bowl, add the feta & chop 1 sec/speed 5.
Add the potato, S & P, eggs, mint and the onion.
Mix 20-30 sec/reverse/speed 2.

Preheat oven to 200oC (180oC fan forced)

Cut either 4 circles or 4 squares from each sheet of pastry, place a heaped tablespoon of the mixture on one side of each pastry cut out, leaving a 1 cm border.  Brush edge with beaten egg.
Fold pastry circle over mixture and use a fork to press the edges together or fold one side of the square over to form a triangle.
Brush with beaten egg and place on a lined baking tray.

Bake 20 minutes until golden.

Tips/Hints:

Kids may not like the taste of the mint, you could use parsley if you wish.

It certainly is, but she died two years ago. She lived to 14 with diabetes and a heart murmur. She was the love of our lives.

Unfortunately they don't have a really long life span but she did really well to reach 14 - my grand-dogs were only 10 when they both died of a heart complaint.  Loved them to bits and loved having to babysit them.

They're fabulous animals. You can see from her stance in the photo that she was the boss. Everything revolved around Misty.

They are really nice Kim but if you don't like the hint of mint, then I would use parsley instead.
