Chit Chat / Strawberries, strawberries, strawberries!

So, I picked up two bucket fulls of strawberries at my local markets this morning!  :)  Yum yum!  They're mostly seconds type ones, but will still be definitely eating some of them.  I'll probably freeze one bucket to make sorbet with.  But I need some ideas on what else I could do with strawberries.  We're not big jam eaters so making jam is out.

  .  It's a kiddie size thermomix.  It apparently does work, but just to do smoothie type stuff. 

Very cute, but not sure I would pay that much for it.

Cakes / Arrowroot Biscuits

I've actually just posted this over on the official thermomix recipe community but thought I would post the link here.  I have so many slices etc that I make that call for arrowroot biscuits, I go to make it, then discover I have none in the cupboard!  So this recipe is great to have on hand for such occasions.

Chit Chat / Seeds sticking onto bread - how to?

I made focaccia bread the other day and wanted to put some seseame seeds on top.  So I brushed some olive oil on top and sprinkled the sesame seeds on.  But when I went to cut and eat it, pretty much all of them fell off!

So is there a special method for getting seeds to stick on top of breads?  Please share your secret!  :)

Chit Chat / Coconut Oil - How do I use it?!

So, I finally found myself some coconut oil which I've been dying to get for a while now.  I have a question though.  Because it's hard (cold pressed), how do I use it?  Do I just scoop it out hard, or do I have to heat the whole bottle to liquify it each time I want to use it?

Vegetarian / Tomato-ey Smoked Chickpeas with Rice

Tomato-ey Smoked Chickpeas with Rice

Grill 1 red capsicum (skin side up) until the skin is bubbling and burnt.  Peel once cool.
Blitz cup almonds to make almond.  Set aside.
Place capsicum, 2 shallots (or 1 onion), and 2 cloves of garlic in.  Blitz until diced.
Add some EVOO, and cook on 100c for 3 minutes, speed 1.
Add tsp dried thyme, 1 tbspn smoked paprika, 1 tbspn brown sugar, and 2 tbspn tomato paste.  Cook on 100c for 2 minutes, speed 1.
Add 1x400g tin crushed tomatoes, 1x400g tin chickpeas (drained and rinsed), cup cauliflower chopped into small pieces, and 2 cups water.  Cook on 100c for 25 minutes, reverse, speed 1.
Add almond meal and cook on 100c for 5 minutes, reverse, speed 1.

Place into thermoserver (I like to add some baby spinach leaves for a bit of colour)
Then cook rice and serve with the chickpea topping.

Jams and Chutneys / A nice scone accompaniment?

I'm baking some of Nay Nay's scones to take to playgroup tomorrow and I'm trying to think of something nice to have with it.  What is your favourite spread/topping to have with scones?

Chit Chat / How long did it take you to puchase your TMX?

A few people have mentioned in other threads about how it took them a day/month/year or whatever from when they first heard about tmx to when they purchased their own.

So, just wondering how long it took you?  What were the reasons for that?


For me, it was around 9ish months.  My Mum went to a demo and signed up that day to buy one and also become a consultant!  I liked the idea of it but wondered whether it would be a bit of a fad and eventually wouldn't get used so much.  But after seeing how much my Mum used it for and me always finding myself thinking how much easier it would be to do xyz if I had a thermomix, I decided I really wanted one.  I then just had to convince my DH to let me spend the money!  We had an unexpectedly big tax return and I took the opportunity to jump in and claim it for myself!  I told him that he spends lots of money on tools for his job so I should get to spend money on 'tools' for my job as a SAHM  ;)  He's pretty big on health so that was a good convincer too.

Chit Chat / Issues when replying

Ok, I don't know if I'm doing something wrong or what is happening, but when I reply to a topic and my reply becomes bigger than the box size, it keeps coming back up the original box and therefor I can't see what I'm typing in the lines below!  It's very annoying!  Any ideas what is causing this?

Chit Chat / "Oh, I could never spend $2000" and other such gems!

So, since having my thermomix and talking about it with various people, I get lots of different comments about the cost side of things.  Usually along the lines of "I could never justify spending $2000 on a kitchen appliance".  Usually I don't bother replying with a comeback but upon further thought that statement is kind of a thinly veiled dig at me (not sure whether that is intended  by them or not).  It makes it sound like I'm either stupid, or I've just got lots of money.

So, wanting to hear stories from others about silly or annoying things people say to you about the thermomix.  And also what are some of the things you say to them in response to their remarks.

Vegetarian / Tofu and Zucchini 'Meatballs'

Tofu and Zucchini Meatballs

Notes:
These make around 28 meatballs.
You can easily play around with the flavouring depending on what you have
I often like to finely grind some almonds/pecans/walnuts and add as well for a slight nutty texture.

Instructions:
whiz the following until fine
1 onion
2 cloves garlic
1/4 cup parsley

then add the following and whiz until the tofu is a fine mince type texture
500g firm tofu
1 egg
2 tbspn tamari (or soy sauce)

Add these remaining ingredients and put on  :-: .  I find I usually need my spatula to help it along
1 cup grated zucchini (squeeze liquid out)
1/2 pkt spring vegetable soup mix
1 cup breadcrumbs
1tsp mixed herbs

add a little milk if mixture seems a bit dry and won't roll into a ball well.

Roll tablespoons of mixture into balls, and flatten slightly (they bake easier that way).  Roll in extra breadcrumbs.

Line a baking tray with paper.  Place the balls on the tray, spary or brush with EVOO and bake at 190c for 20 minutes.  Turn, spray with a bit more oil, and bake for another 15-20 minutes.  Cool.

I usually freeze half the mix (there's only 3 of us) and with the other half I bring a tin of tomato puree to a simmer and drop the balls in the sauce.  Heat through.  I usually serve with a side of vegies

So, I've tried to convert a few of my already existing non-thermomix recipes so I could make them in the thermomix.  Some did not go so well!

I've also had some failures with some thermomix recipes which I've decided to tweak a little bit.  And yeah, not an ideal result!

So I thought it might be fun to share what some of our worst thermomix cooking fails have been!


My absolute worst was when I tried to convert a banana bread recipe that I had.  Normally I would hand mash up a couple of bananas and grate 1 apple.  I decided to chuck both of these in last, just cut up in chunks, and whiz it in.  However the apple didn't seem to want to break up enough, so I kept whizzing and whizzing until it did.  When it was time to take it out of the oven it just did a big sink in the middle and was so dense and undercooked.  I think I must have basically ended up pureeing the banana and apple in which is what made it so dense!  It was actually quite inedible.  Epil fail!

So, share your epic fails!  (And help me feel better about some of mine  :D)

So I've been reading up on rapadura sugar recently.  I just have one question and I can't seem to find the answer by googling.  If I use it for baking, and therefore gets exposed to a high temperature, does it essentially negate all the goodness that was originally in it and therefore not really any better for me than white or raw sugar?  Just trying to weigh up the extra cost vs health benefit.

Hi to everyone!  I've been lurking around here for a while and thought I would finally register and start contributing.  I've had my TMX since just before Christmas and have just started really investigating all the health benefits it brings, so I've got a few questions  ;)
