Many years ago I was pretty sick and, in the course of trying to find some help with my illness, I went to a traditional Chinese medicine doctor.  We were discussing food, eating, etc. and he said that, according to the principles of Chinese medicine, it was not good for your body to eat within four hours of going to bed.  I try to follow that advice and, personally, I haven't really found much difference, so I can't say whether it is so or not, but I also prefer to eat earlier than later in the evening anyway.

My husband (who always has to have a cuppa after dinner) has also found that drinking Rooibos tea (southern Africa's "bush tea" for anyone who reads Alexander McCall Smith's books) makes a difference at night as it is either no or low caffeine so allows him a more restful sleep.

I think QuirkyJo will know more about these matters than I, but just wanted to pass on those comments.

A good reliable jelly recipe would be great - looks like I'll be making grape jelly as well as apple jelly this season.  Would I be right in assuming that the process for grape jelly would be the same as the process for apple jelly?

Funnily enough, I have just been thinking much the same thing myself the last couple of days.  My husband has slightly elevated cholesterol levels and we are both overweight.  All those lovely sweet things on this forum have been fabulous, and I've loved experimenting with them, but not so good for us and I love my husband more than sweet things, so I've got to reform.

I'm a vegetarian and my husband calls himself a "vegetarian by marriage" so I would really love to see some great, healthy heart type vegetarian recipes or suggestions.

I agree with everything everyone has said!!!  I have found a whole new world of cooking since I found the forum and got my TMX - I had never made "real" custard before, neither had I had any luck with pastry - it's all thanks to all of my extremely generous, helpful and knowledgeable forum friends and the TMX. 

The only drawback with this forum is that I am becoming a "Forum Addict", I keep popping on here when I get a chance  just to see if anything new has come up and it's not doing my workload any good (it just seems to get higher and higher)!

Thanks for all your suggestions everyone, and for following up with a PM Kim, I'll have a go with puff pastry when I get a break next week on Australia Day.  I hadn't realised there was a puff pastry recipe in the EDC, but as I am a vegetarian the lard would have made it a bgt "NO NO" for me.  Would butter be a suitable substitute for the lard?

Kindles are only available on line from Amazon.  If you order one be sure you select the appropriate options for an Australian model.  It is also nice to have the cover - helps protect the kindle and I think it is easier to hold with a cover, but it is an option and you do have to pay extra for it.

Recipe Requests / Puff Pastry

Many recipes on the forum call for the use of puff pastry – my impression is that most, or maybe all, commercially produced pastry contains dangerous trans fats (I think with the exception of filo pastry).  I am very leery of purchasing pastry because of this and thank goodness that there are so many great pastry recipes on this forum to make instead of having to rely on the supermarket varieties.

Does anyone have a recipe for puff pastry made on the TMX – or is it just a short pastry rolled and re-rolled lots of times with knobs of butter in between?  I’ve never made puff pastry, and only started making TMX pastry a couple of weeks ago, so I’m a complete novice at this.

Also, the recipes that have puff pastry in them ask for “1 sheet”.  If I feel brave enough to make my own puff pastry, can you give me an idea of just how big one sheet is?

I agree with you Frozzie, we don't know the individual circumstances, but her behaviour really was selfish and inexcusable (after all, if she needed more bread, she could have easily gone back into the store a minute later to buy some more and no one would have known the difference).  However, you are also right, stress does make most of us act out of character and panic buying totally blows everything out of proportion.  You are a very understanding person and I should try to take a leaf out of your book and try to be more compassionate.

I got an email this morning from my sister who lives in Queensland and she wrote this:

" .... there was some panic buying with bread, milk and petrol, but the roads are open now. 1 lady went to buy 6 loaves of bread when there was a limit of 3, when they stopped her at the checkout she tore open 3 of them, threw on the floor and stamped on them so no-one else could have them."

What a %&^*#@! person - I hope they made her pay for those three loaves and confiscated the other three.  Like the looters, there are very few like her, but they somehow seem to overshadow all the good folks.  I heard on the news that there were 12,000 volunteer helpers in Brisbane on Saturday and they were expecting the same on Sunday. 

We had some minor flooding in my husband's workshop (in Central Victoria) and we were so lucky to have wonderful neighbours who turned out to help us as well.  We were very lucky compared to so many others.  I suspect the really hard part for them will start now, once they can actually get back to their homes and come to terms with their own personal situation.

I have still to have a varoma demo as well.  I think my consultant is a bit reluctant to follow this up with me as my home is out in the country and I don't think she's too comfortable doing the run out there.  Also, I don't know whether you are 'expected' to have several people attend a varoma demo, as you are with a delivery demo (not sure that I could get enough people to come along to make it worth her while - I'm also a bit embarassed that the delivery demo didn't raise any positive leads for her).

Perhaps I could find someone holding one in the Central Victoria region that I could join in with????

That's an amazing list, Sue, your children are very lucky to have a mum like you.

I'm afraid I can only just manage my good old favourite, porridge, of a morning.  When we lived in Asia I used to love a mixture of fresh fruit for breakfast, but I had more time then to prepare this each morning.  These days, eggs florentine is my favourite treat.

... mmm I've never been to Romania and I'm looking forward to my visit very much - although it is strictly business - my husband and his colleague are going round the wood suppliers as they both need wood for their work (they are both violin makers and Romania has very good wood available).  Hopefully will get to see a bit more of the countryside than the wood yards - my fingers are crossed.
