they are so yummy - made the last batch with cheese and bacon on top of half :) and will be using a plain one tonight as a pizza base :)  (promise I will get pics and recipe up soon, just not 100% sold on it yet.  Still think it either needs less water or lower temp/longer cooking time...

OMG - I just made the best "sandwich" wrap thingy which was gluten free and tasted GREAT!!!... it would also work brilliantly as a pizza base.  I used the thermomix - just cause I could, but will do a bit more tweaking (and mak it at least once more :P) then post the recipe.  For those who want a sneak peak - here is the original recipe  http://glutenfree.wordpress.com/2007/07/18/gf-wrap-sandwich-success/

Yum yum yum.  Did not even need to toast it - first "sandwich" (without using toast) in sooooo long, and tasted brilliant.  (ok yes I am over tired - up most of night with a teething bub again, so a little crazy, but seriously yum) tasted a bit too much like a pizza base, but I think I need to lower the oven temp and bake a little longer... Anyway we will see tomorrow.

Ok excited rant over now, off to get some rest and sleep (hopefully)

The lot that I jsut made then also I left the skin on.  These did not come up quite as smooth as normal, but really really tasty (in our opinion)

One idea, when I look at my "mash" using the EDC cookbook recipe (without the cheese), just before the butterfly stage (after a full 25 mins), looks like lumpy mash. So maybe using it at this stage would work?  or maybe just briefly turn up the dial before removing it to mix it through a little more.

Personally I quite liked the creamy smooth texture of the EDC one, but it still in my mind is more creamed potato than mash.  I think the point before the butterfly reminds me of mash.

And it looks like and tastes like lemon sauce from lemon chicken, or I prob would have tried thickening it up as it was for lemon butter (but since it neither looked like or tasted like lemon butter...)

Glad to hear something worked in the end.  Maybe this recipe works best with the gluten free flour - I've made it twice with the orgran flour with no problems - but I find that stange since it was a "normal" flour recipe to start with.

Thanks for the feedback though - and glad you found a use for the crumble

Strange.. Was it completely air tight?  Mine were both very soft even in fridge.  but I think you can just leave it out for 20 mins or so before rolling to get it soft enough to roll (without leaving it too long of course)

Caroline - I made this with the bought GF flour and it worked well (one 2 different occasions, one pre thermomix and one post), I made my own combination of GF last night, and it was not really nice (I used option one in the GF cookbook for flours - just did not work in this recipe without adding extra butter I think)

I did consider trying to thicken it.  But it is so tasty as it is... So lemon chicken I think it will become (just don't have any chicken breast yet so will wait until after shopping day)
