Condiments and Sauces / Salsa de champiñón (Mushroom sauce)

Name of Recipe:  Salsa de champiñón (Mushroom sauce) – not tested

Tablespoons are European ones, ie 3 teaspoons or 15ml

Serves:  Makes 1 litre

Ingredients: 
150g prawns
100g white wine
50g extra virgin olive oil
1 tbsp butter
1 clove of garlic
2 leeks (only the white part)
250g mushrooms
200g cream
Sal, to taste
Pepper, to taste

Preparation: 
Put the shells and the heads of the prawns into the  *: (reserve the bodies) together with the white wine and make a broth 4 minutes / 100° / Speed 3½.
Strain through a fine sieve and reserve.
Thoroughly wash the  *: and lid.
Next, tip the oil, butter, garlic and the leeks into the  *: 3 seconds / Speed 5 to chop them all.
Using the spatula, push down the ingredients inside the  *: 5 minutes / Temp. Varoma / Speed 3½.
Afterwards, chop 15 seconds / Speed 5 and push down the ingredients inside the  *:.
Add the mushrooms in thick slices, the cream, salt, pepper and the reserved prawn broth 10 minutes / 100° /  :-: / Speed  ^^.
One minute before the end of the cooking time add the prawn bodies.
Check that the mushrooms are tender.

 Tips/Hints:  Serve this sauce with any type of fish.  If you like, you can add the juice of half a lemon.

Name of Recipe:  Salsa Mornay – not tested

Serves:  Makes 800g

Ingredients:  
100g Gruyère cheese
400g milk
200g cream
50g flour
50g butter
Nutmeg, to taste
Salt, to taste
Pepper, to taste

Preparation:  
Grate the cheese for a few seconds / Speed 5.
Add the rest of the ingredients 7 minutes / 90° / Speed 4.

Tips/Hints:  Use it to gratinate fish, chicken, cooked vegetables.

b]Name of Recipe:  Salsa templada para ensaladas y verduras (Warm sauce for salads and vegetables) [/b] – not tested

Tablespoons are European ones, ie 3 teaspoons or 15ml

Serves:  Makes 400g

Ingredients: 
70g walnuts
150g extra virgin olive oil
50g butter
50g soya sauce
1 tbsp mustard
A few splashed of Tabasco

Preparation: 
Chop the nuts in the  *: 3-4 seconds / Speed 4
Remove and reserve
Next, put the rest of the ingredients into the  *: 4 minutes / 60° / Speed 4
Add the reserved nuts 1 minute / 60° / Speed 1.

Tips/Hints:  Use this sauce for salads of endives, raw spinach, asparagus, chicory, cabbage, lettuce etc.  Also for cooked vegetables.

Name of Recipe:  Salsa tártara (Tartare sauce) – not tested

Serves:  Makes 300g

Ingredients: 
10g pickled gherkins
10g baby onions
10g capers
Parsley
1 hard boiled egg
1 raw egg
The juice of ½ a lemon, or vinegar
25g water
Salt, to taste
300g oil

Preparation: 
Chop the gherkins, onions, capers and parsley in the bowl 3-4 seconds / Speed 4-5.
Remove and reserve.
Chop the hard boiled egg 4 seconds / Speed 4.
Remove and reserve.
Without washing it, put the raw egg, lemon juice, water and salt into the  *: 10 seconds / Speed 4.
With the MC in place on the lid program Speed 4 and pour the oil on the lid, little by little.
Once the mayonnaise has been made, add the chopped pickles [and the egg] and mix well with the spatula.

Hi Goldfish, Thanks for the link I think it says (I have only knowledge of tourist German):

225g mayonnaise
150g yoghurt
50g tomato ketchup
40g milk
10g lemon juice
10g parsley
Salt, pepper and Tabasco [to taste]
1 red pepper
4 gherkins
2 hard boiled eggs

Mayonnaise, yoghurt, tomato ketchup, milk, lemon juice and parsley and mix for 3 minutes / Speed 3.
Transfer to a bowl.
Add the peppers, gherkins, and the eggs 6 Seconds /Speed 4.
Add the chopped ingredients to the bowl [with the mayonnaise mixture] and stir.
Season with salt, pepper and Tabasco.

Hopefully a German speaker will confirm or correct my interpretation. :)

Name of Recipe:  Salsa de trufa (Truffle sauce) – not tested

Serves:  Makes 300g

Ingredients: 
1 small tin of truffle
8 pickling onions
30g extra virgin olive oil
40g butter
2 leeks
100g white wine
1 meat stock cube
100g cream
The liquid from the truffle tin
50g brandy
Pepper

Preparation: 
Peel the truffle and reserve.
Put the black part in the  *: with the pickling onions, oil, butter and leeks 4 seconds / Speed 5.
Using the spatula, scrape down the inside of the  *: 5 minutes / Temp. Varoma / Speed 2.
Add all the other ingredients except the remaining part of the truffle 5 minutes / 100° / Speed 2.
If you want a smoother sauce blitz 15 seconds / Speed 7.
Finally, chop the remaining part of the truffle, add to the  *:, stir, using the spatula and check seasoning.

Name of Recipe:  Salsa para carne (Sauce for meat) - not tested

Serves:  Makes 1 cup

Ingredients:  
300g onions
150g mushrooms
2 cloves garlic
100g carrots
50g extra virgin olive oil
200g red wine
1 meat stock cube

Preparation:  
Put all of the ingredients into the  *: except for the wine and the stock cube 4 seconds / Speed 5
Using the spatula, scrape down the inside of the  *:.
Program 10 minutes / Temp. Varoma / Speed 1.
Add the wine and stock cube 5 minutes / Temp. Varoma / Speed 4
If you want a smoother sauce blitz 15 seconds / Speed 7 and check the seasoning

Tips/Hints:  You can substitute the red wine with cream, yoghurt, cider, white wine etc

Name of Recipe:  Salsa bearnesa (Bearnaise sauce) – not tested

Serves:  Makes 400g

Ingredients: 
50g vinegar
50g shallots
200g butter
1 tsp tarragon
4 egg yolks
Salt
Pepper

Preparation: 
Put the vinegar and the shallots in the  *: 5 minutes / Temp. Varoma / Speed 4 / MC Off
Add the butter and then the rest of the ingredients 4 minutes / 70° / Speed 4
Tip immediately into a bowl

 Tips/Hints:  If it curdles, remove from the  *: and without washing it, add 25g cold water to the same.  Set to Speed 4 and incorporate the curdled sauce, little by little, through the hole in the lid, with the MC tilted.

Name of Recipe:  Bechamel de dieta (Diet Béchamel) – not tested

Serves:  Makes 1 litre

Ingredients: 
30g extra virgin olive oil
30g onion
600g courgettes, peeled
200g skimmed milk
Salt
Pepper
Nutmeg
4 low-fat little cheeses [I think what they mean by ‘little cheeses’ are the little triangles of cheese which are wrapped in foil and sold in about 6 to a round box]

Preparation: 
Pour the oil into the  *: 3 minutes / Temp. Varoma / Speed 1
Add the onion and the courgettes 7 minutes / Temp. Varoma / Speed 1½
Incorporate the milk and the condiments 15 minutes / 100° / Speed 1
Then blitz 15 seconds / Speed 5
Add the cheese and blitz again 15 seconds / Speed 5
Check that it is homogenous, and if not, program for a few more seconds at the same speed.

Ingredients: 
1 tbsp olive oil
50g butter
110g flour
800g full fat milk
Salt, to taste
Pepper, to taste
Nutmeg, to taste

Preparation: 
Put the oil and the butter into the  *: 1 minute / 100° / Speed 1
Add the flour 2 minutes / 100° / Speed 1
Add the rest of the ingredients and mix 5 seconds / Speed 7 and then 9 minutes / 100° / Speed 4
Use this sauce to cover whatever dish you like.

Serves:  Makes 250g

Ingredients: 
200g extra virgin olive oil
50g Sherry vinegar
Salt

Preparation: 
Put the ingredients in the  *: and emulsify 25 seconds / Speed 5-6

 Tips/Hints:  If you want a flavoured vinaigrette add flavours as desired:  dill, basil, coriander, tarragon, hazlenuts etc.  First crush at Speed 7 and then emulsify at Speed 5-6 for a few seconds.

Name of Recipe:  Salsa rosa (Marie Rose sauce) – not tested

Serves:  Makes 500g

Ingredients:  
3 egg yolks
The juice of ½ an orange
80g tomato ketchup
2 tbsps brandy
A few dashes of Tabasco
Salt
300g oil

Preparation:  
Put all of the ingredients into the bowl except for the oil, and mix 10 seconds / Speed 4
With the MC in place, set to Speed 4 and pour the oil, little by little, onto the lid

 Tips/Hints:  If you like, you can add half a teaspoon of horseradish

Serves:  Makes 500g

Ingredients: 
50g Parmesan cheese
30g ewes’ cheese (optional)
1 clove garlic
30g pine nuts
80g basil leaves
Salt, to taste
150g olive oil

Preparation: 
Wash the basil leaves and dry them thoroughly.
Put them in the  *: together with the cheeses, pine nut and garlic clove 20 seconds / Speed 7.
Add the oil and the salt  and emulsify 20 seconds / Speed 7.

Name of Recipe:  Lactonesa – not tested
[This is a type of mayonnaise made with milk instead of eggs]

Serves:  Makes 500g

Ingredients:  
150g milk
1 clove garlic [optional]
Salt
300g oil
The juice of ½ a lemon
A few glugs of vinegar (optional)

Preparation:  
Weigh the oil and reserve.
Put the milk, garlic and salt into the  *: 1 minute / 37° / Speed 5 (if you don’t want the garlic, program 30 seconds / 37° / Speed 5)
Program 3 minutes /  37° / Speed 5 and drop the oil, little by little, onto the lid, without removing the MC.  (The oil will fall little by little into the  *: )
Next, add the lemon or vinegar and mix for a few seconds at the same speed.

 Tips/Hints:  You can add a little colouring or mustard to give it colour.

Name of Recipe:  Mantequillas aromatizadas (Flavoured butters) – not tested

Serves:  Makes 600g

Ingredients: 
Fines Herbes butter
30g chives, chopped
10g celery salt

Tarragon butter
20g capers
10g fresh tarragon, chopped

Anchovy butter
6 semi-preserved anchovy fillets

Preparation: 
Make the butter according to this recipe using 600g cream.
Once made, the butter can be flavoured to your taste.
Add your chosen ingredients to the butter in the bowl and mix 5 seconds / Speed 5.

Tips/Hints:  The flavoured butters can be used as a sauce in hot plates of pasta, baked potatoes, meat or fish.
