Name of Recipe: Salsa de champiñón (Mushroom sauce) – not tested Tablespoons are European ones, ie 3 teaspoons or 15ml Serves: Makes 1 litreIngredients: 150g prawns 100g white wine 50g extra virgin olive oil 1 tbsp butter 1 clove of garlic 2 leeks (only the white part) 250g mushrooms 200g cream Sal, to taste Pepper, to taste Preparation: Put the shells and the heads of the prawns into the (reserve the bodies) together with the white wine and make a broth 4 minutes / 100° / Speed 3½. Ingredients: 100g Gruyère cheese 400g milk 200g cream 50g flour 50g butter Nutmeg, to taste Salt, to taste Pepper, to taste

Name of Recipe: Salsa tártara (Tartare sauce) – not tested Serves: Makes 300gIngredients: 10g pickled gherkins 10g baby onions 10g capers Parsley 1 hard boiled egg 1 raw egg The juice of ½ a lemon, or vinegar 25g water Salt, to taste 300g oil Preparation: Chop the gherkins, onions, capers and parsley in the bowl 3-4 seconds / Speed 4-5. Remove and reserve. Chop the hard boiled egg 4 seconds / Speed 4. Remove and reserve. Without washing it, put the raw egg, lemon juice, water and salt into the 10 seconds / Speed 4. With the MC in place on the lid program Speed 4 and pour the oil on the lid, little by little. Once the mayonnaise has been made, add the chopped pickles [and the egg] and mix well with the spatula. Hi Goldfish, Thanks for the link I think it says (I have only knowledge of tourist German): 225g mayonnaise 150g yoghurt 50g tomato ketchup 40g milk 10g lemon juice 10g parsley Salt, pepper and Tabasco [to taste] 1 red pepper 4 gherkins 2 hard boiled eggs Mayonnaise, yoghurt, tomato ketchup, milk, lemon juice and parsley and mix for 3 minutes / Speed 3. Transfer to a bowl. Add the peppers, gherkins, and the eggs 6 Seconds /Speed 4. Add the chopped ingredients to the bowl [with the mayonnaise mixture] and stir. Season with salt, pepper and Tabasco. Name of Recipe: Salsa de trufa (Truffle sauce) – not tested Serves: Makes 300gIngredients: 1 small tin of truffle 8 pickling onions 30g extra virgin olive oil 40g butter 2 leeks 100g white wine 1 meat stock cube 100g cream The liquid from the truffle tin 50g brandy Pepper Preparation: Peel the truffle and reserve. Put the black part in the with the pickling onions, oil, butter and leeks 4 seconds / Speed 5. Using the spatula, scrape down the inside of the 5 minutes / Temp. Varoma / Speed 2. Add all the other ingredients except the remaining part of the truffle 5 minutes / 100° / Speed 2. If you want a smoother sauce blitz 15 seconds / Speed 7.
