Title: What was the first thing you ever made in the THX?
Post by: Rowyfo on April 09, 2009, 11:46:15 pm
So I got my machine yesterday!! :D :D :D And it got me thinking, what was the first thing you made? Pressing the buttons at a demo doesn't count ;)

Last night I made butter, this morning I will be making porridge. I'd love to hear what you all did. I hope it was memorable enough. :)

I think my first effort was a sorbet.

i can't remember  8) but i'm guessing either icecream (the frozen milk type) or custard

Mine would have been a custard I think. The first time I had to be so aware of time, speed and temperature. I thought I would never get the hang of it.

I think I am addicted :P This morning after the porridge I made hot cross buns. Then garam masala. Then hummus.

Last night I was still getting the hang of locking the lid on, but this morning seems to have gone better. I have had lots of cleaning to do :P

LOL (remembering) I was very excited - took it to my Mothers to cook the first meal and invited guests (strongly not recommended for the first meal!!).  i cooked John Dory Fillet out of the Seafood cookbook.  I had no idea about timing of everything (rice, fish and vegies). ::)

Think it was the Asian Fish with rice - I'm getting old and the memory does strange things.

Congratulations! I used mine sooo much the first few days that my DH got jealous!  ::) ::) ::)

He still is a little! ::) ::) ::) He wishes that I was as passionate about him as I am for my THX!

I made Gazpacho and garlic mayonnaise, and custard and rice pudding all that first evening! After the Ratatouille and steamed rice that my Demonstrator had made with me!

We had butter chicken last night. I would have happily fed it to guests although I didn't try cooking anything else with it like vegies. We aren't really dessert people here but that might have to change ;)

I love seeing all your firsts. I was a little intimidated the first night so DH made dinner as usual while I made butter on the other side of the bench :P

Hi,

Great topic :)

My first was the Creme BrulÚ (which was a failure, far too runny) - the next was a perfect Risotto

The most funny thing was a danish dish of meatballs with rice and curry sauce - where everything was made in the THX.

Mostly I use it for Creme Anglaise for Ice Cream (on my PacoJet)

It's silly how if we slaved all day in the kitchen over the stove and oven, then spent an hour cleaning up all the dishes they wouldn't be jealous, but because we enjoy using the Thermomix then its a different story.... As long as you're happy I say!!   ;D

And thank goodness I don't have to deal with that anymore!!  ;) :D :D

Still appreciates it but, there's the underlying tones of "Loook at mooiee, Loook at mooiee". " I was here first"  ;) ;)

This one was started when I was away so I missed it and only found it today.  Interesting reading - great topic!
I list the recipes I do at the back of the everyday cookbook as I find it easier to find then again - does anyone else have trouble finding recipes in that book or is it just me?.  My first few efforts (not all successfull I might add) were sorbet, potato cakes, mashed potato, custard, porridge, apricot chicken risotto, pumpkin soup, mayonnaise, coleslaw, veg stock concentrate and many more since the early days.  Been a great journey and getting better by the day thanks to this wonderful forum.  My daughter did more in hers in the early days as she was on holidays but now my efforts far exceed hers and I am able to give her advice rather than the other way round.

Glad you found it Judy :)

Well I still haven't had a day without using the TM, and even just this morning I have used it to help me make pastry, quiche filling and soon, minestrone.

I don't think I have had a failure yet, apart from once when I read a recipe wrong and made something more like dry biscuit batter rather than porridge.

I sometimes have trouble finding the recipes too, especially the bolognese sauce for some reason.

I think the book should have side tabs to make it easier to find categories.  Let's know how the soup turns out (is it the one from the everyday book?) as I know someone who made it and said it was lacking taste.

the book is shocking for finding anything in , the 'spine' makes it really difficult

The original Australian book is truly appalling - very badly compiled, badly indexed & with poorly tested recipes.
The second one is better, bit still needs help.

I must agree that the Everyday book is hard to find things in. The more I use it, it seems to improve. I have now taken to putting little 'post it' tabs on the things I make frequently. They get very tattered looking but who cares?
Title: Re: What was the first thing you ever made in the THX?

The soup was pretty tasty. I changed up the recipe a tiny bit and used half chicken stock and half water, and because I added a few too many vegies didn't use the full amount of water either so it was more like stew.

I like the idea of little tabs or flags. Is the first edition spiral bound?

The chicken stock would have boosted the flavour for sure.  Will try it this winter.
All my TMX books (except Full Steam Ahead which is a proper recipe book) are spiral bound - must be the cheapest way of doing them. Don't know if my everyday book is the first edition though - TMX was here in Australia for quite a while before I even heard of it, let alone buy one.

The first thing I made was a Chocolate Guiness cake from the UK Thermomix website.

I have since done a mushroom risotto, pea and lettuce soup and hollandaise sauce.  I'm a bit hampered as my car is out of action so I can't get to the shops, but as soon as I can, I will be baking bread.

I have the UK cookbook and was wondering whether people had other Thermomix cookery books which they would recommend?

I have the Aust Every Day cookbook that came with the machine, the seafood bounty book, GF book and vegetarian books seen on this page http://www.thermomix.com.au/01-cookbooks.html (http://www.thermomix.com.au/01-cookbooks.html)

The vegetarian has good recipes that have been well tested (I believe), the new Everyday cookbook is better than the one I have, but apparently still needs some work.

Do you speak any other languages?  Spanish, Italian, French, German ??

Dulce de leche must have been the first thing I made.  I went back to where I had posted on eGullet to see what I'd written - I'm including my post from there for your entertainment.

"Valuable lesson number 1 - RTFM - if you fail to RTFM you will not have discovered that the maximum capacity of the TM31 is 2 litres. Therefore you will take your standard dulce de leche recipe and break it in half and add 3 litres of milk plus 400 grams of sugar to the bowl. This - in combination with following the directions mentioned above - which has you use varoma heat (>100║ C) and speed 5 - will result in a Mount Vesuvius like reaction . Not a good look for my counter. And of course I didn't know which buttons to bang first to turn it off.

But after splitting my remaining rescued batch (ie that which wasn't on the counter or the floor) and cooking for about 90 minutes or so at 100║ C gave me a wonderful DDL quite painlessly.

I'm questioning whether I'll be able to use the Thermomix to make chewy caramel. I'm going to have to figure out the size of my batch. It's also going to require finding a way to insert a thermometer into the batch without hitting the blades. "

I drilled a hole into the flange of my TMX  spatula so I could insert the probe of my Thermapen and the tip of the probe extends almost to the tip of the spatula.   It has worked fine for me and the Thermapen accuracy is better than that of the TMX.

Good work Andie - I have tried using a Blue Gizmo to check temps, but with the blades spinning it varies so much and the temp on the dial really relates more to what's on the base - so great idea.

Love your "Spatula Mod" Andiesenji - thanks for sharing that!  8)

First thing I ever cooked was "stir fry" ... that recipe is part of the Canadian demo my friend Bill experienced. He came back from the demo with a TMX in hand and stopped at my house to show it off. The stir fry made itself while we sat in the garden and he told me all about the demo he'd seen that day....the smell of cooking garlic wafted out the screen door and hit our nostrils just before the timer sounded. I was pretty much hooked from that moment.

So hooked was I, that I insisted he leave the machine at my house so I could properly um... test it out...  ;)  I think I spent more time trying to talk myself OUT of buying one, than I did in deciding to buy it. To no avail -- obviously.

... and, as they say...  the rest is history.

Happy new year everyone!
TMB - Helene

A smoothie was the first thing we made. No recipe books required, but we did RTFM before hand. ;) The first food we made was the stock concentrate so we could make the risotto. I didn't have enough celery (in the garden!) so I just used what we had. Surprisingly it turned out pretty well, but quite yellow because of all the oil - I forgot to reduce that bit considering I had hardly any of the other ingredients, and we don't eat onion or garlic or cooked tomato.  :D I replaced the onion with a bit of spring onion and the smell nearly knocked me for 6. haha. I'm really not use to onion anymore!  :-))

I have made the stock concentrate since and it was much better. Green in colour because of the parsley and made the pumpkin soup really very yummy.

Mashed potato. Of course, old habits die hard and I forgot to weigh/measure so it turned out a bit like smooth potato soup. :) But still yummy and the boys liked it, which was the exciting bit ;D

I've learnt with mashed potato to only add liquid in small amounts as I think it needs it during the whipping process.  Most recipes have far too much liquid in them and it is just slop, albeit it tasty slop  :D :D  It depends on the type of potato you use as well as to how much liquid they need so I now apply this method whenever I am mashing potato.

Woerd this is the one my DD made quite successfully.
4 egg yolks
130g unsalted butter
20-25g lemon juice
S & P to taste

Insert butterfly.  Place all ingredients into TM bowl and cook 8 minutes 90oC on speed 3. If the butter is cold it may take a bit longer to cook but keep your eye on it as she didn't need any extra time and used eggs straight from the fridge.  Remove from bowl and serve immediately.

Then there was a German one posted somewhere on here but we haven't made this version.

4 egg yolks
100g butter
80g cream
1/4 teaspn white pepper
1/4 - 1/2 tspn salt
10-15 mls lemon juice
Cook 6 minutes 80oC on speed 4

Not blind woerd - just that it is not set out simply.

http://thermorecipes.blogspot.com/2008/10/october-gratin-cups-new-hollandaise.html (http://thermorecipes.blogspot.com/2008/10/october-gratin-cups-new-hollandaise.html)

"New Hollandaise

Ingredients
4 egg yolks
130g unsalted butter
juice 1/2 lemon
salt and pepper to taste

Method
Place all ingredients into TM bowl and insert Butterfly attachment.
Cook at 90 degrees for 8 minutes on speed 3.

General Tips
Hollandaise is still an art, even in the very easy to use method we have here, so bear in mind that the time may vary slightly depending on the freshness of your yolks and the coldness of your butter. If you like a mousse consistency then you may add a minute or so to the cooking time if necessary.
The best test for fresh asparagus is the 'snap' test. The stalks should snap fairly close to the bottom of the asparagus if fresh.

I cant remember exactly which one I made FIRST, but I know I did those - mashed potato, cooked rice, sorbet and butter!! All before the end of week.  :D

Used TM alot for chopping vegies and herbs though as well as smoothies.

Sometimes I think I need second bowl so I can keep going, rather than stopping and clean!  :-))

Cheers!

Vege stock concentrate I think, it's hard to remember. I made the hollandaise from the EDC, and it worked really well. I tried the cream puffs recently as a guy at a cooking class was talking about how good his were - good flavor but not very puffed! My cooking teacher mum tells me i didn't get the oven right!

The first thing I made in mine by myself the next day after delivery was pumpkin soup.  I was sooooo impressed because it took less than half an hour to have hot, fresh delicious soup and the only washing up I had was my bowl and spoon!!  I have had my thermomix for 10 days now  :)

Did you have the air con on high or don't you mind soup in the hot weather?

I was just thinking the same thing - especially with all the hot weather we have been having. I struggle to make anything hot and  we mainly live on salads in this weather  :-))

Us too. I really can't be bothered. I was blaming the holiday and cold but both are gone now and I still feel the same. I am truly tired of the hot weather. It has been so consistent. We've broken all the weather records now, can we please have some cool weather?

he he he I lived up north for 20 years and my body has learnt to enjoy things regardless of the weather or I would have had to go without soups, casseroles, hot desserts, etc, etc for 20 years.  It was great actually, the thermomix didn't heat up the kitchen like the stove top would've!  Am having curry tonight, have been craving hot apple crumble lately.  Don't worry, I do eat lots of salad in the middle of winter, too!  :D

I have horror stories of an English ex MIL, hot Christmas Lunches, 6+ months pregnant and having Christmas at Nabawa in a tiny 2 bedroom fibro house (Nabawa is east of Geraldton) *shudder* I still feel sick thinking about it all so heat and hot foods just don't do well with me even after living and growing up in Geraldton for 25 years  :-)) :-))

Don't you just feel for the early "pioneer" women around the world who only had solid fuel cookers to cook on, regardless of the time of year - all that heat during a hot summer and with long sleeved dresses on as well - we are so very lucky!

You are too right Culidh.  My dear darling nanna passed away only 5 years ago and she lived in a little old fibro house in Coolbellup but still to her final days was using a copper to boil her washing -- wouldn't have one of those new-fangled fancy washing machines, she was 92.  Luckily she did succumb to the "luxury" of an electric stove/oven and to modern-day cool, loose clothing.   ;)

And faffa, we still have hot Christmas lunch even to this day!

*shudder*!!!!

I do think perhaps if I wasn't pregnant at the time I might have coped better - now it has just left me with bad memories lol

I have loved this topic, I am new to the forum (today) and am waiting on delivery of my TMX. Lots of ideas for my first recipe, think I will have to keep thinking but cannot wait till I can post what I have cooked first! Thanks for the inspiration fellow Thermo Fanatics!

Sorbet, sorbet and more sorbet!  I made it for anybody and everybody who came over to my house to visit. We ate sorbet everyday for the first week at least.

I still cook a hot traditional Christmas lunch as well as a Roast every Sunday, but then again I am in Tassie and the occasional 'hot' day is nothing compared to what most of you experience for weeks and months on end  :(

There is some advantage to living in a cold climate, isn't there  ???  ;)

I made a Taco Meat Sauce for the very first TMX meal. I must have been felling very confident with 'Beryl' as to make this I first had to search for a recipe and ended up putting two recipes together because I couldn't find exactly what I wanted. I still have my scribbled notes blu tacked to my kitchen wall!

Hi CP63. Yes I used the seasoning and then had to 'discover' how to brown the mince, etc, etc. The seasoning is great...very yummy and got DS's approval.

First thing made in TMX, ?  You will have to ask the chooks.  I couldn't believe that anything could mince/shred so quickly.

Back in the 1980's I made curried carrot and celery soup. It is still one of my favourite soups.

Having had it less than two weeks, it's easy to remember.

I made marinated lamb leg steaks in the varoma with steamed potatoes and carrots (I had to use up the lamb steaks so decided to look up some recipes. . . not something I would immediately associate with TMX)
