Title: Vegetable Stock Concentrate Question?

I am wondering if you can use sea salt in the vegetable rock concentrate rather than rock salt?  I made the first one with rock salt but this time I am making it with sea salt and wondered if it will preserve it the same or whether it will change it at all ... anyone know?

I don't think it would make any difference at all. Would all work the same :)

I agree Dede.  I think the only salt you shouldn't use is the reduced sodium variety.  I make mine with pink Himalayan rock salt for the extra mineral content  :)

I use either, but dont use too much.

Freeze 1/2.

I freeze mine, but because of the high salt content it never freezes completely - although no-one's died yet from eating it!

I only add a tsp or so of salt because I freeze mine in ice cube trays (1 tbsp amounts).  I prefer to add salt to what I'm cooking instead.  :)

You just solved my question.

I thought my freezer was acting up.

I made veg concentrate, froze in ice trays, then bagged.... And ended up with sludge!
Now I understand the salt is problem. Will use less next time.
I just take 1 tsp sludge out at a time!

Next I must decant chicken stock, will this be same? I used 100 gmssalt . And quirky cookings   http://quirkycooking.blogspot.co.uk/  stock recipe with a few extra veggies like fennel.

Am I right in saying that the stock lasts for up to 6 months in the fridge with the amount of salt in them? (I think that's what my consultant told me)?

Yes it keeps well Bubbles because of the salt content but I freeze mine in ziplock bags and it spoons out quite easily - that way I don't have to worry about how long it has been in the fridge.  You will find most batches will get used up before the use by date though so whatever is easiest for you.
