As this recipe is hidden away somewhere on the forum (although I usually manage to find it) I thought I would post it here for all to find very quickly.
320g plain flour
1teaspn salt
3 tblspns olive oil
1 tspn baking powder
180g warm water
Place everything into the bowl.
Mix 10 seconds on speed 7 to combine.
Set to locked position and knead for 3 mins.
Put dough onto breadmat and rest 5-10 mins.
Divide dough into 12 pieces and roll each piece into a flat round.
Fry in an oiled hot frying pan until they start to brown. Turn them over and cook the other side.
OK to freeze.
Also great for making tortilla chips in the oven with any leftovers.

JulieO - Just a tip. Once you have lightly fried them, place them in your thermoserver as you go, it will keep them warm and supple otherwise there's a good chance they will dry out and crack as you try and roll them. Another way to keep them supple is to put them in a large zip lock bag if they won't fit in your thermoserver. I only get 8 out of this mixture and they aren't as big as the bought ones either, so if you want bigger ones, then make less.
Hally - Well I made 6 Tortillas. They tasted great, far better than I thought they would. They make the shop ones I buy taste like cardboard!!! Rolled into 6 so managed to get them a good size. I couldn't keep them warm as they were too big for my thermoserver. Next time I would make them earlier in the day and heat them in the oven for serving. My problem was I couldn't keep them warm and stressed that they would be cold. Once in the pan they didn't take long to cook. The first 2 & the last 2 were the best. I wiped out the pan after I had done 4 as the spray oil was getting black marks on the bread. I think with practice you could get them wrinkle free, mine tried to fold up at the sides. Great result for my 1st go.
I made these again last night, yum, soft & crispy ones. Very cheap to make. Used my sandwich press.
Uni - I made some too. I rolled them with the pasta roller and only made 2 just to try will make the rest tomorrow just before I need them.

You'll never get perfectly round tortillas even if you use a tortilla press, but they do taste far better than store bought ones. :)

Hally, I only get 8 out of this mixture and they aren't as big as the bought ones either, so if you want bigger ones, then make less. Don't expect miracles especially the first time you make them they can be a little tricky, and you'll never get them as thin as the store bought ones, but taste wise they are much nicer. I hope you have success. :)

I rolled with the rolling pin, bread mat underneath & a sheet of baking paper on top. I tried to make them to fit my fry pan, a couple were larger & the bread went up the sides. I would say that this recipe makes 6 decent sized ones.

Thanks Nazar, next time it will be easier & less pressure as I will do them earlier in the day or at the weekend when DH can help.

Deep fryers are very safe H. Just follow the instructions. We had one til DH melted the lid by putting it on the stove top which had just been on. :@(
Trying to lower fat intake so I now just cook everything in the oven.

I bought it to make chips once a month as a treat. I will have to post a photo of it, its a stainless steele one.

Hally and Fundj your tortillas look excellent. Not hard to make are they, just fiddly, but worth the trouble as they taste much better. Another way to keep them supple is to put them in a large zip lock bag if they won't fit in your thermoserver. :D

i have been playing around with these for a few hours
while i was making a snack :-)) with the ones i made yesterday which i must say it was yum i had a thought :-))
why not cook them in the sandwhich press, the 1st one was over cooked the second one was to thin and it cracked
the 3rd one was just right, it only needs about 1min to cook

Hally, I made 8 out of the mix and the size of the rounds just fit nicely into the thermoserver. I made them as you know for the beef enchiladas and are the perfect size for that meal. 6 sounds right for when wanting stand alone wraps. :)

Looking at buying a tortilla press, needs to be 10" to ake a good size wrap.
Does anyone have one & are they worth it.

I have the same press as JulieO Halex and have only used it once. I found it didn't press them flat enough and I still had to roll them (a lot!!!). I make my wraps thin like store bought ones though. I find putting them on a plate inside a plastic shopping bag works well to keep them warm before using. I use my bread mat and roll them really thin (no flour) and don't use oil to fry them. Just a hot pan and a few second on either side. Better to undercook than overcook wraps.

Thanks Chelsea, its the rolling I dont like, but if you still have to roll I wont bother buying one. Defeats the point of buying one.

He & ds have said they wont eat shop bought ones, so fair is fair.... i will spend all that time kneading wearing my fingers to the bone, LOL ;D

The tortilla press is really for pressing corn tortillas (masa flour). They press very thinly and don't spring back like the wheat ones. I have tried them, bought the flour specially, but I didn't like the taste at all. :-\
Because I have one l still use the press for the wheat ones to flatten and get a round shape and then use a rolling pin from there, but it's not worth buying one just for that. :)

I made these again last night, yum, soft & crispy ones. .Very cheap to make :) used my sandwich press.
Tonight I opened a box of Angas Park crispbreads from The Barossa Valley, cost me a fortune, these tortillas are far superior than Angas Park crispbreads at a fraction of the cost.

Judy, I've only ever made enough for the beef enchiladas so haven't had need to freeze any, so will be interested to see how Fundj goes with hers. I would think as long as they are separated by baking paper etc they should come out okay, just would need a warm up again before using. :)

Yes, I figured they would be the same as crepes which freeze well that way.
