Title: Adding a vegie and chicken to risotto !

If i was to make a chicken risotto, and wanted chunks of pumpkin
at what stage would i add the pumpkin? (newbie)

i was going to use the mushroom base risotto without the mushroom and then add the chicken chunks
when i should be adding mushroom?
and then maybe the pumpkin cubes

Do you think this would work?

depending on the  size of the pumpkin cubes HARPER  if too big they will be raw, and the mushrooms only need a few minutes

u could steam the pumpkin cubes 1st then throw them in the last 5 min of cooking

When I make chicken and asparagus risotto. I steam the chicken and asparagus in the varoma while the rice is cooking and just add it at the end.

Thanks for this suggestion mcmich, I tried this the other night and it was delicious. I used the EDC recipe with the mushrooms, then added in the steamed chicken and asparagus at the end. Yum  :D

I would do a variation of faffa's feta and pumpkin risotto  (http://www.forumthermomix.com/index.php?topic=2849.0) which is absolutely delish. She roAsts her pumpkin in the oven before adding it at the end.

Me too Robyn, but unfortunately DS doesn't like it. It has to do with the texture I think.
