here is the original http://www.thepinkwhisk.co.uk/2012/03/tiger-bread-or-should-that-be-giraffe-bread.html
it was to early for me to try and converter the uk tsp to aus tsp i dont think thats was the problem i think it was the rice flour that i used
I forgot to say that i used the no fuss recipe :)
-
Looks pretty good to me, Uni . . . :D
-
Looks good Fundj, what is it that is not right to you?
-
i just had some with butter its very crunchy which i love. this paste would be lovely on any bread
not enough stripes :-))
-
Love the name change fundj ;D
-
Looks good, woukd like to try & make this when I have time
H :)
-
Looks pretty good to me too fundj. I think I'd use the No Fuss recipe too, I know that works. ;D
-
good girl uni
-
I tried this today but I think it needs to be a white loaf. Mine was a hybrid - 1/2 plain white flour (had no white bread flour) and 1/2 Phyosoy linseed & soy bread mix. The topping to me was too thin after 10 minutes so perhaps it needed more rice flour, either that or be left longer to thicken up. I was happy with my loaf though and will try the tiger bread again next time.
-
I made it too using the no fuss recipe. I also found the 'paste' very runny and so added 2 more spoonfuls of rice flour which seemed to do the trick. Was good for something different. :D

Clever people. It looks just like shop Tiger Bread.
-
JD and julie did you both use TM rice flour or store bought stuff ?
-
I made my own using brown rice Uni - what did you use?
-
same JD but i did go shopping and bought some, when i got home i mixed some with water and its was more of a paste than this mornings one, did yours have a lovely crunch?
-
Oh yes, it certainly did. I just think that recipe on the link needs more flour Uni as Julie also thought and she did add more. No way would I buy rice flour when I can make it so cheaply. Hardly ever need it but will use it for bread quite often now.
-
i will be still be making the rice flour too jd, just wanted to see the texture of the bought one
-
Goulash Soup served with Tiger Bread. Delicious! "to die for" said DH, and now there is only about 3 inches of bread left!!! I put in 35g of rice flour for the paste, and it still wasn't like in the picture but it worked out fine. I used the Cobb Loaf recipe. Thanks uni :-*
-
Fabulous CP, you can just keep cutting into a loaf of freshly baked bread - who can possibly live without bread carbs :-))
-
Oh this forum just gets better and better. I'm throwing away all my recipe books and sticking with the forum ;)
(not really)
-
There you go Uni! Aren't you glad you caved in and made this fabulous bread this morning?? T'was meant to be! Look how happy you've made everyone - including CP's DH!! What a woman!! ;D ;D ;D
-
CreamPuff63 that looks so good, what did u use TM made or bought rice flour?
my lot love it 2 will be making more tomorrow ;D
-
goldfish when r u going to give it a go ?
-
measured out the rice first, and ground it before I made the bread. I also slashed a few stripes, cos I wasn't sure how much it was going to crack but even that surprised me whilst it was cooking. I would slash again tho. Yep, looks like this will be a regular loaf.
-
Tomorrow or maybe Saturday . . all inspired now :D Thanks Uni!! :-* :-*
-
i will be waiting for it on saturday GF
thanks CP will try a few slashes 2
-
it would of have been perfect if i used white flour ;D
-
Looks amazing. I have prmoised myself that we eat the bread in the freezer first, or at least some of it ;D
H :)
-
Looks fantastic fundj. Did you do anything different? Mine had a big crack down the top which I don"t know why. Didn"t detract from the eating pleasure though. ;D
-
yes i did julie i used store bought rice flour
2 tbl warm water
1/2 tsp dried fast action yeast
1/2 tsp caster sugar
1 tbl vegetable oil
3 tbl rice flour
rest for 1/2 hour or until doubled in size

i wish u luck with that :-* i just made the some promise to myself , again :-))
-
Julie, did you follow the method from the link for folding the bread. I tried it and mine split too so I won't be doing it that way next time. I might just throw it into a tin instead.
-
Yes I did Judy. I do like the free form shape so will try again but without the folding. :). Fundj did you do the 'folding'?
-
I tried the folding but I couldn't understand if it was just bringing the two long sides to meet in the middle and then tucking the shorter ends under, and then flattening out again and repeating? I got a bit impatient and then thought b*gger it, cobb loaf always turns out with all this spine building rigamaroll so I went onto the next step.

Thanks for this fundj. I ground my own rice, wonder if it makes a difference? Seems like we all found it too thin.
Thanks CP, am going to try the cobb recipe too next time u :)

update,i have done a little test
-
I've been meaning to make tiger bread for ages. The Beechworth Bakery Book has a slightly different reciipe for the tiger topping.
I have tried this now and Uni's is much better. Thanks Uni.
-
bump
-
uni that looks amazing, may just give this a try since I successfully made the cobb loaf
-
I bought some rolls with this finish a while back and the topping was so darn hard - never again.
-
Just made the paste.
Very thick?
Used extra T flour for UK T.
Added extra t oil and water per T to make Aussie measurements.
Will look again in half an hour to see if more like a paste. Cobb loaf dough rising in bowl now.
Will shape and paint before rising and hope it works.
Found some fast action yeast in cupboard as usually now only use fresh yeast as have found a brilliant supplier by post and the bread is even better than before.
-
It worked thanks Uni and JulieO, used Cobb loaf recipe with 20 g fresh yeast.
Look

Slid loaf on to pizza stone for baking, using semolina as the means to move the loaf - an anti stick agent - I placed the loaf before proving on a tin well sprinkled with semolina.
Here is the finished article

-
Thanks Uni.
I just smeared iton with my hand, wasn't sure but it worked.
DH very happy with it!
Maybe some sesame oil to give it that distinct tiger taste?
-
Missed this one.. Will have to try :)
-
Wow, that's beautiful. I love tiger bread but never ever thought I could do it at home. Having a tmx is certainly an eye-opener! ;D
-
Fantastic DJ, my tiger marks didn't look like that when I did it :-))
-
Wow DJ that looks amazing.
-
Thanks v much.
It's not just *: its the pooled knowledge on here.
