Title: Pumpkin soup help

Just whipped up a pumpkin soup, but its a bit bland. I think the pumpkin is to blame.
Just wondering what others would suggest I add to it?
I was thinking maybe a tin of creamed corn.
I made the recipe from the EDC.

Dede, powdered stock, garlic and onion ,chopped speed 5/cooked Varoma/5 mins/ sp 1.   Or tomato paste.  Depends on what you have on hand.

I have a recipe that has sauteed onion, garlic, 1 tsp chopped chilli and then after making the pumpkin soup component you add the above corn. You add the 415g can creamed corn after blending the soup, stirring it in gently.

Thanks, think I will try the tin of creamed corn and see what it's like. Will leave it to cool down before adding the corn.
I remember when I got engaged at our party I made pumpkin soup, but we didn't think there would be enough so mum whipped up some more pumpkin soup and poured the hot pumpkin soup into the cold pumpkin soup and the whole lot fermented and had to be thrown out. :(

LOL...Pumpkin soup is the ONE thing I dislike in the TM!.....have tried many different ones/methods, but we just prefer it the old fashioned way  ;)

Cumin is always good with pumpkin, but probably best added at the beginning of cooking.

I finally got it right last week i sautéed the **** out of the onions, carrots, potatoes and the pumpkin for about ten minutes of varoma then added the stock and cooked it agian until it tasted right to me

i use nutmeg and when i have some blue vein cheese i will added 2

You could fry up some smokey bacon until it's crispy and sprinkle it on top. No good if you are looking for a vegetarian meal though!

Well I added the tin of creamed corn (was going to write corned cream :) )
Tasted pretty good. But I reckon the bacon idea would be nice too.
Oh crap just remembered I better check my dough that's rising.

I always add creamed corn to my pumpkin soup. Also add a dollop of sour cream mixed with sweet chili sauce on top once served. YUM
If only DS would eat soup  :P

Well I really enjoyed the pumpkin soup. Was so thick the spoon could stand up in it :) and so filling. Myself , DD 12, DS 5 and DS 16 had pumpkin soup. DD 8, DS 14 and myself had chicken and veg soup. DH is yet to have any but my guess is he will have both soups as well. Yum yum with fresh dinner rolls.

I actually quite like the pumpkin soup recipe in the EDC, with a couple of slight modifications (tips obtained on this forum).

I follow it by the letter, except I use half the stock (250gm instead of 500gm), and use 2tbps coconut cream instead of cream (I think the coconut cream idea was in the EDC under variations actually).

Tastes great in my opinion.  My mother-in-law thought it was the best she's ever had.

Kent I really think it depends on the type of pumpkin you use. I think my pumpkin was just a little immature (picked from the garden). Some pumpkins make a much tastier soup than others. But it was still lovely and filling. :)

I use butternut pumpkin for most recipes as i like the taste.

I agree. I have a heap of butternuts growing in the garden now. I should check them now that the weather has turned as at least some of them should be ripe by now.  My favourite pumpkin soup recipe roasts the pumpkins with some carrots, onions and red capsicum in the oven first. It really intensifies the flavour and makes it really yummy. Oh, if it wasn't dark outside,  I'd run out and pick one and start cooking.
Dede, you have made me crave pumpkin soup, but like you I will need to make another type of soup as DH and DS don't like pumpkin  :-\

I often do the coconut cream thing as well and add a bit of coriander to jazz things up. Otherwise I use quite a bit of Vegie stock ie more than the recipe states in the EDC if I'm using that version.

l will have to agree with maddy   l love pumkin soup but hate it made in the thermie
l dont know why
l made two excalty the same except for one was in the thermie one on the stove top
 and did a blind test and l thought the one made in the thermie was not as nice as the one made in a pot
 l wish l knew why as l love pumkin soup and its so  quick and easy in the thermie

Interesting Nazar. You would think the end result would be the same. I know my pumpkin soup made in the TM was ok (not brilliant ) but ok. But I really think the pumpkin was to blame not being a string enough flavor.

Yep curry powder would be something I would add. Sounds nice. We have 2 big pumpkins I need to use up so there will be more pumpkin soup for us. :)

I made the EDC pumpkin soup yesterday when my mum dropped by unexpectedly (trying to convince her to buy a TMX!) used butternut pumpkin from our garden and it was delicious! The onion was an extremely strong one though so that might have added a lot of flavour. Will try a couple of the other variations suggested here as well...

Was browsing through the Malaysian cookbook which Katie lent me and came across a Pumpkin Spread recipe Uni, quick and easy too. I will post it in jams.
