Title: Egg whites

Does anyone have an idea of the average weight of an egg white ie in a normal supermarket egg? I could find out by weighing them myself but short of cracking eggs to do this, someone gave my sister a carton of egg whites and when a recipe states to add eg "3 egg whites" I would like to know the rough weight to  tell her how to convert  some of her recipes to the TM. I know, weird question, so sorry in advance!

I have no idea on that one. I guess an average size egg is say 60 grams, egg yolk would probably be 40 grams and egg white maybe 20 grams (but only guessing)

Gee this one was hard to find out Merlin and this (http://wiki.answers.com/Q/What_is_the_weight_of_a_large_egg) is the only one that was quite specific about the weight of an egg white.

Thanks all and yes, woolworths apparently sells cartons of fresh egg whites only! I have also seen frozen egg whites at Coles.

How can eggs have no yolk in them? Or are they already separated ?

Yes, they are separated. I just rang my sister and she said on the package it says "100% pure liquid egg whites" it is a 500g carton equivalent to 16 egg whites apparently. It says that to replace 1 large egg use 3 Tbs and 2 tsp, to replace 1 egg white in a recipe use 2 Tbs.  It seems to be manufactured in NSW and is called "Naturegg- Simply egg whites". I should have a look out for some, although I better use all of the frozen egg whites I have first!

Thank goodness for that, I pictured a normal carton of eggs with whites only in them ;D

You can buy pasteurised egg whites here in the UK called Two Chicks (http://www.twochicks.co.uk/) :)

I don't know all these different types of eggs.
They call eggs barn laid (cause it sounds better than cage laid) when the fact is there is 1000 chicken all locked up in a small shed area :(
And free range eggs are from 1000 chickens locked up in a small area out side.
I love my chooks who roam free and poop all over the place and scratch up my garden. At least they are happy :)
And you can't beat home grown eggs.

According to Stephanie Alexander, an average egg white is 30ml or 1 1/2 tablespoons.

i know that 6 egg whites weigh 190grams (59g eggs)

30gm is the weight that chefs use as 1 egg white - I have found that the yolk and white of the egg each constitute 50% of the weight.

Well there you go, I thought the egg yolk would weigh slightly more than the white. Learn something new every day :)

 . . .I've never seen or heard of this before.  I'm wondering . . . is this just a by-product of already broken eggs?  Do they break the eggs deliberately??  What happens to all those yolks???
