My kids love the Latina spinach and ricotta tortellini (that's the green tortellini with the ricotta filling).
I'm going to try to replicate it now that I have a TMX and also a new pasta machine. ;D
I think I will use the egg pasta recipe from My Way of Cooking (which has instructions for making the green pasta using spinach leaves).
Does anyone have any recommendations for how to make the ricotta filling? And has anyone seen any good instructions on the web about how to actually form the tortellini?

I'd be interested in using up some ricotta as I found that ricotta with the colander in Woolies and now I have to use by the 29 April. Noticed in C*les they sell this in the deli section by how much you require, and would bin the colander on a regular basis probs. If you were feeling a bit cheeky, or you knew the person behind the counter you could probs just ask for it somehow. I really want to have another go at making myself.

on fresh bread

Spinach & ricotta in puff pastry triangles
Also made chookies ricotta cake..

Thanks Hally, I really had to use the whole lot and found one of Alyce's recipes for a cake that required the full 1kg. Have it in the oven just now. Not sure if I'm going to keep it or send it off with DD tomorrow for work, as I also made a Banana cake ???

From looking at that clip it looks like one of the major factors for success is getting the quantity of the filling correct ... a case of "less is more".

I just had to give these ago , so glad that i did, guess whats for dinner tonight ;D
for the filling i used some sausage roll mixture from the freezer,now that i know that they will not fall apart while cooking i will add some sun dried tomatoes and some garlic paste to the mixture

Sorry it's taken me a while to get back to this thread - been busy cooking in the TM! Lol! Here is a picture of the spinach and ricotta ravioli that I ended up making. It took a while to get the hang of the pasta maker (especially with a 2 year old that insisted on helping!) but in the end it turned out pretty well (although I probably need to roll the pasta a little thinner as it was a bit too thick)! I served it with sundried tomato pesto.
I used the basic pasta recipe from My Way of Cooking (adapting it as suggested at the bottom for spinach pasta) and then mixed up some ricotta, garlic, coon tasty cheese to use in the middle of the pasta.

Well, everyone ate it (and with a 1 year old and a 2 year old - getting them to eat is not always easy!!) so I'm going to say that they liked it! :)

Thanks! :) I really enjoyed making the pasta with my pasta maker - so much easier with the TM making the dough!! Can't wait to make more now.
