Title: Help with bean soup from a taste of vegetarian
Post by: Lisel on April 23, 2012, 04:28:10 am
Hi
Wasn't sure where to put this, hope here is ok.

Has anyone made this bean soup, it is on my menu plan for tonight and I've just read the recipe properly and the only liquid is 50g of water, for the steaming of green beans and the soup itself?  I am suspicious of the recipe as the instructions are very vague, eg "add remaining ingredients and cook for 8 mins, varima, reverse +2" yet the remaining ingredients include 1 zucchini halved, 1 leek sliced and one carrot.

I can presume I need to chop the veggies as one would for soup, but am now wondering if it is worth bothering with this recipe, I don't have time to deal with a failure and dinner time is too hectic to be trying to 'fix' a recipe on the run.

Someone will come to the rescue.
I don't have that book, or I would help.

Robyn :)

Haven't tried this recipe, Lisel, but I think you are right about the volume of water.  I would put more in (perhaps 500 ml as the 50g may be a typo, i.e. they put in 50 instead of 500), keep an eye on it, and certainly add more water if it looks like it needs it.  I would also chop the veges first.  The varoma, reverse speed, etc. should be right for chopped veges, but do a taste or texture taste to check that they are cooked through after the 8 minutes, I suspect it may need more time.

If it is too thin or runny at the end, zap it briefly as chopping up the beans should thicken it up for you.  Let us know how you go.
