Marsala Baked Quince
Ingredients
quince
440g caster sugar
3 star anise
250ml sweet marsala
juice of 1 lemon
Preparation
Peel and core the quinces.
Scatter half the sugar into a large shallow dish.
Lay quinces, cut side down, onto sugar and sprinkle the rest of the sugar over.
Place the star anise in.
Drizzle marsala, lemon juice and 1 cup water over.
Cover dish and bake 2-3 hours (depends on the size of the quinces) at 180 degrees.
Baste quinces during cooking.
The liquid will caramelise and get quite thick. The recipe said to cook for 4 hours but I found it too much.
This is nice with rice pudding or icecream.

Cookie, I have never tried quinces. Only just discovered figs. LOL

They must be cooked and are sort of a cross between a pear and an apple. They are horrid to core though.

Can attest to that Cookie . . . . peeling and coring just 1 1/2 Kg left me with a blistered finger! :( But sooooooo worth it . . ;D ;D

I've told DH and DD if they want more icecream they have to help core the blighters.

Approx. how many quinces did you use?

I used about 6-8 but you could use more. I just got sick of coring them.
