This is a lovely light butter cake. I did my normal thing and mixed the butter and sugar together on speed 3 - 4 for a minute or so, then added 2 of the eggs, one at a time, mixing for about 30 seconds each time. Then added flour and rising agent with the other 2 eggs and followed Dani's directions from there.

Trying to get these photos smaller. In Picasa Web Albums, they're tiny and I've reduced them 3 times in Photobucket. What web albums does everyone else use?

Made this yesterday.
Easy & quick to make.
A great basic sponge, tastes great as is, but easy to add extra flavours.

Katie made a fantastic version of this cake today and was kind enough to cut into it so that I could bring a piece home with me. It was delicious - I'm sure she will post a photo and tell you about it herself. I would not hesitate at making this one if I needed a cake.

Dani mentioned this recipe at her seminar and I thought I'd try it. It's probably the easiest recipe in this book!
I used some cooked rhubarb and some uncooked apple as the fruit. I left out the coconut and the orange blossom water and added some vanilla instead. It does look a moist soft cake.
