Hi, I have mountains of chillies growing at the moment but most of them are still green. They are slowly turning red but I fear the frosts will be here before they all turn red. I've been making harissa paste, chilli jam and drying the red ones.
Any suggestions on what to make with green chillies?? Thanks

do green chillies always turn red? what about green capsicums?

I freeze mine to use later.

When I have excess chillies of any kind I dry them outside in the sun or just leave them on the bench until very dry then put them into the Thermomix and grind them to put in a jar. Do NOT stick your head in the TMX to sniff. No NO do not do that.

Oh Frozzie you won't be laughing if you put your head into the TMx to sniff at 250 gms of chopped dried birds eye chilies. Not nice. Took me a whole bottle of Sav Blanc to recover.
A very interesting experience to say the least. I thought I would have to go to the hospital but got too pissed to drive. DH still has major belly laughs at every mention which is often in his case.

The doctor in the house agrees with your prescription - he says that alcohol is the best treatment for a chilli overdose!

LOL! Naughty doctor should have said milk with sugar. Once in Songkhla Thailand at a rather remote beach hut "restaurant" I had to dash into the makeshift kitchen and grab a can of sweetened condensed milk to douse the fire. Obviously there was no Sav Blanc in the esky.

No one wants a doctor who is going to say milk and sugar! and I would be happy to also self prescribe with the sem sav medication that Gert gave herself ;D

You can pull the whole plant out of the ground, hang it upside down in a place away from where it might freeze and allow the pods to ripen. You can then dry them or your can smoke/dry them to get a deeper, more complex flavor.
You can also make green chile salsa and freeze it or can it, if you do canning. These are low acid so have to be canned with a pressure canner.
