Title: Veggies to use up

I should have cancelled my last veggie deilvery, but didnt.

I have a large pot of ministrone soup on the go.

I still have 1/2 white cabbage, 1 carrot, spring onions, iceberg lettuce,1/2 red cabbage, loads of potatoes.

Any ideas?

I dont want to buy anymore food.

I akso have quite a lot of eggs.

Yes thats all  I could come up with & we have been eating a lot of coleslaw recently.

We leave friday very early, but thursday night we are out to eat. That way I can keep the house clean.

Just used the leek in the soup, never mind.

Scalloped potatoes, yes tomorrow.

Might make egg fried rice for ds & dh lunches.

Love all the ideas.

Hally you can peel and cut up potatoes and freeze. Cabbage too.
Maybe do a quiche.

Down to 1/2 red cabbage, 3 spring onions, small amount if celery, iceberg lettuce & loads of potatoes.

Doing well. Saw Judy had a nice potato rosti recipe. Will make that, uses small potatoes which I have :)

Just made egg fried rice.

Potatoes freeze well Hally. Cut up like Robyn suggested or you can even make mash and freeze it serving portions.

 if the spring onions have roots even if they have been cut at bit , you can plant them in your vegie garden  and they will grow
so next time you need spring onions you just get it from your garden
l do this all the time when l see them reduced to clear

What a great idea Nazar. Never knew that one.

My DH just come home with a heap of silver beet(50 leaves)  about 20 cucumbers, 30 large carrots, white beet root a zucchini and some purple things I can't identify lol. What am I supposed to do with all that?

Chop up some of the veg., sweat down some cabbage with butter and pepper, add eggs, pesto and make frittata.

Just google 'what to do with .....' Mandi and you will have plenty of ideas come your way. I usually make carrot soup and carrot cake (both TMX recipes) if I have a lot of carrots. Silverbeet you can blanch and freeze for later. The purple things aren't eggplants are they?  There are a surprising amount of things to do with cucumbers when you look into it.

Thanks Judy and Maddy. As for the purple thing it's not an egg plant, kind of looks like a cross between a Swede and artichoke lol. It's a root veggie. Will have to take a photo and post it here so someone can identify it for me.

Thanks Judy it worked that time. Oh well I guess I will try chips then. I don't know why my DH brings home veggies we don't eat like broad beans (none of us like them).
As for all that cucumber well I better start looking up some recipes. I do like cucumber, tomato and onion in vinegar with a little sugar. :)

I use kohlrabi the same way you could use a lot of root vegetables. It has a mild flavor so can mix in a lot of meals in secret 😉.  Lots of people have never seen them. Checkout girl at shop once tried to look it up (so I could pay for it) as 'cold rabbi'😊

I was about to say it looks like a purple kohlrabi. It would be good as a remoulade - I don't know where the link is but there is a celeriac remoulade on the forum which would also work with kohlrabi. The colour is beautiful though. Otherwise you could steam it or finely chop it up to use in a salad ie similar to a coleslaw.

Well it's one of those veggies I have never tried, although I have heard of them before. I thought it was a different breed of sweed/ turnip or something similar.
I have had a bit of a google seach and seen quiet a few recipes. Now to choose one.
I think there is 3 of them in the bag (amongst all the other veggies)

By the way has anyone tried white beet root ? Does it taste the same as the purple beets?

Dede, how erxciting all thise veggies. I havent seen the kohlrabi brfore & to be honest havent heard of it either.

P.s. Nazar the spring onions came from the veggie patch, they were getting huge & didnt want them to get any bigger. :) what. Great idea.

No I think the others were right about it being kohlrabi. My Dad was here today and that's what he said too. Although he said they are not very nice.
  Oh well I'm still going to try slicing them thin and putting them on an oven tray drizzled with olive oil, with a bit of S & P and bake them and see what we think.
