Cooking with Tenina
Last night I was lucky enough to attend Tenina's cooking class. I didn't count, but there were probably well over 20 people attending.Three 'girls' had driven from Bendigo ,(through a storm), and 2 from way up north , from Wangaratta. No one regretted attending. Tenina could have filled 2 classes from our area.
I am a bit of a cooking class junkie and by now know what I need to look for. I want to find out new information and I want to be entertained.
On arrival we were all provided with a small drink/sample of Aztec Hot Chocolate Shot. The ingredients were described in a booklet that was most professionally presented. This booklet contained the 9 recipes that Tenina was going to make and we were going to taste.
Throughout the evening, Tenina's generosity of spirit was evident as she shared tips with us about how to get the most out of our TMX.
The tips that i found most valuable were.......
1.Always use the very best ingredients that are available
2.Use Couverture chocolate for best results
3.Cook onions on Varoma temp for 5 mins.
4.To make icing sugar, grind/cool/grind/ cool. Do this 10 times so that it is not gritty. This is how commercial icing sugar is made.
5,Bread is best kneaded for 4 mins. ( but we already knew this) Tenina said that this develops a better texture.
6.Most things can be chopped at speed 5., however herbs need speed 6 or 7 to prevent the herbs wrapping around blade.
7.To chop nuts, best to add to a wet mix so that they don't turn to paste.
8. place small ball of dough into a jug of luke warm water. When it rises to the surface of the water , the main ball of dough should be ready to be shaped.
9.Melt chocolate at 37/ speed 1. Chocolate ganache at 50.
10. Tenina uses raw sugar in all her recipes, unless otherwise stated.
11. Soak and drain Quinoa before cooking.
12. Most Australian ovens are not accurate in Temp. test your oven.

What was most popular?

Several people mentioned the Baked Camembert en Croute. I was pleasantly surprised at the Quinoa filling in the roasted peppers, What I really enjoyed was the Pecan Dacquoise.

If you can possibly attend one of Tenina's classes, do so, as you will get to use your TMX to greater advantage.

Thanks for that info Chookie. All this info helps us all become better cooks and have better results. Tenina's classes not only sound really good but lots of fun too.
If Tenina comes to Tassie (north) I would definitely go along.

Yes thanks Chookie for taking notes which is what I should have done but I tend to veg out when I get a chance to go out like that.  I am going to print off your list of Tenina's hints and keep it inside FFS. Glad you had a great time - I loved the camembert thingy whatsit too.

That was a great summary Chookie - I think my favourite were the rolls, I don't think I have ever had such a light fluffy roll in my life.

I think that one of Tenina's greatest strength's is that she makes everyone feel like they are her friend who has just dropped in for a coffee.

If you ever get the chance to attend a class you wont be disappointed - I personally can't wait for her next one & next book ( no pressure Tenina!!)

 I think Thermomix is still too unheard of over in UK for it to be worth anyone doing classes. But I did notice in the last email from uk head office they were doing a cooking demo with one of the contestants from uk masterchef (an Italian lady  - which I guess is why she knew 'Bimby').  I wish Tenina would do YouTube episodes. Can you lot over there encourage her to do this - so us lot over here don't feel so left out? Please! Thank you Chookie for the notes - made me feel like I was at the class.

I attended Tenina's cooking class today at Frankston, it was fabulous, thanks Chookie for noting the tips I had read them before I went and was glad not to have to write them down, didn't want to miss a second of what was going on.  The only thing missing was a glass of wine to go with the food.   :-)).  Had a great time and would definitely go to any others that come around.

Last night I went to Tenina's cooking class at Chirnside Park and really enjoyed myself.  It was such a fun night where I picked lots of tips (thanks Chookie for writing them down) and sampled some amazingly tasty food.  My favourites were the stuffed peppers and Pecan Dacquoise.  The kitchen where the class was held was very well equipped and had a mirrors over the demonstration bench so we could see very clearly what was going on inside the bowl.  Recommended.

I thought the same thing Brenda but didn't want to say anything in case people thought I had a problem  :-))  I daresay most of the places the demos are held are not licensed for alcohol consumption.

I've never been to one of Tenina's classes. When she is next back in Perth I will have to make the effort to attend one. I think I need to drag DD along as well. She has never even been to a demo. Since she got her machine for Christmass the only one she has seen seen cooking with one is me. 

She has been slow to get into using it but has steadily been building up her confidence.  She is not much of a cook and I hope that the TM is going to help her develop her abilities.

MJ I was looking at Tenina's website earlier and it looks like there are 2 classes in Albany on 29 March.  That might be easier for you than Perth.  It is too far for me to go after work and I would need to book a hotel room.

No pressure at all !!!!….

And yes, you are right about the liquor license…different in every state, and some places you have to have a licensed person serving…not totally un do able, but not easy.

(BYO in a paper bag!!!)

Thanks Chookie for sharing the info.  I so nearly went to the Frankson class, but it just wasn't to be.  Please come back to Victoria, Tenina!  I sounds like your classes were a huge, huge success!

Just go on to her site and ask her. She's a wonderful person and a fantastic ambassador for the Thermomix. I went to the class in Albany and loved every single second of it.

When I asked about coming to Sydney when we were on the retreat last year she did say it was hard to get the right facility and it was also quite costly.

Lucy we do get some thermomix classes come to Newcastle. The Devil of a coobook creator was in Charlestown last year and Dani Valent who did In The Mix was in Newcastle about June last year too.

Oh dang it, I would have loved to have gone to this, only a couple of suburbs from where I live too:(
Excuse my ignorance, but how did you all know about Tenina's cooking classes?
I am subscribed to her e newsletter but didn't get any notification about her being in Melbourne, have just been on her website but
couldn't find where to click on cooking classes...Birdie, can you or someone provide a link or info please....Im kicking myself for missing this great opportunity now.

EDIT UPDATE.
I just noted the year, March last year not this year....oopsy, that explains it all - sorry :)
