This is definitely one to impress....big time! Fantastic combination without being sickly sweet, went down a treat at work! 8) 8)
Banoffee Pie:
8/10:
Ingredients:
Pastry
350g flour
130g cold butter, little pieces
70g water
pinch salt
2 tablespoons sugar
1 teaspoon baking powder
2 tablespoons cocoa powder
Dulce de lecheyummy caramel :P :P
1 litre full fat milk
130g sugar
120g brown sugar
200g fresh cream
1/2 teaspoon bicarb
Whipped cream
500ml fresh cream 35% fat
2 tablespoons icing sugar
5 bananas (our bananas are tiny) probably 3 would be enough
Cadburys Flake to decorate
1 beaten egg to brush pastry
Preparation:
Place all ingredients of the pastry in THX in order as above in list. Program 15 seconds, speed 6. Place straight into a plastic bag in fridge to chill for at least 15 mins.
Make the Dulce de leche by placing all the ingredients in THX and program 50mins, Temp Varoma, Speed 5. Place basket over the hole in lid so that it evaporates. Makes an extremely thick, sticky, toffee caramel.
Pre heat oven to 180º, and roll out pastry into quiche/flan/pie dish. (I made 1 big one and 2 small individual ones) Prick with fork, and brush with egg and bake for 15 to 20 minutes, until a bit crispy. Remove from oven and slice the bananas and cover the pastry with the bananas, by this time the Dulce de leche should be finished pour over the bananas and chill. When its chilled, (I waited till next morning) whip the cream in THX by placing butterfly over blades, add chilled cream and program speed 3 and 1/2 until stiff (mine took about 30 seconds) and then sprinkle some icing sugar in and carefully fold in, pipe over the pie and then finally crumble the Flake over the top.

JD - It certainly is delicious. Must admit though I was a bit worried about how I was going to clean my TM bowl with that caramel cooking away at such a high temperature for so long.. No need to worry though, it was easier to clean than mashed potato. I soaked my bananas in lemon juice to prevent them from going brown as it is going to take the 2 of us a while to eat this huge pie - Mum will get a chunk, have to share the calories around!
I can see me doing this dessert without the pie crust too. Would cook it a little less time so that it isn't quite as thick and layer it in some nice stemmed glasses with the bananas & cream. I've also made this with a biscuit base instead of pastry, it's a lot quicker.
Julie) - I made this today only making biscuit bases instead of pastry. I got a 20cm tart and 2 mini tarts (only 6cm bases) out of this filling. Was so much nicer than other banoffee tarts I've made, they were always too sweet, but we found this to be just right.
Biscuit base recipe - this is enough for a 20 cm tart and 4 mini tarts.
250g pkt granita biscuits
125g butter, melted
Place the whole biscuits in the TM bowl. Process 4 secs/speed 8.
Pour in the melted butter and combine 15 secs/Reverse speed + 3, until fully incorporated.
Divide the biscuit mixture among chosen sized tart tins with removable bases. Use your fingers or the back of a metal spoon to firmly press the biscuit mixture over the base and side of each tin. Place in the fridge until required.
You may wonder why after adding the butter I mix on reverse speed. It's because I've found in the past that if I blitz the biscuits too much, when the tarts have chilled in the fridge the bases can be quite hard to cut through with a spoon. I've found mixing the butter through on reverse will incorporate it throughout the biscuits without chopping them any more.

Debbiebillg - The banoffee pie was a very huge success. Not one piece left ! There were other deserts left over (there was too much as usual), but none of the banoffee pie !!!! ohhhhh so yummy. Brilliant recipe !
cgonsalv - Finally made this today with a biscuit base ... can't believe that the dulce de leche was so easy to make.

dede - Just finished making this, my caramel was really thick, should I have cooked it not quiet so long? I let it go for the whole 50min, I noticed the caramel thickened up a lot in the last few minutes of the cooking process. Just a bit rich for me. Update - Ok well I just discovered that the Banoffee pie is heaps better the next day, decided to have a little bit tonight again, this time I really enjoyed it. Thumbs up from me and everyone else. DH agreed that it is much nicer today.
Mab19 - I made this for our dessert at the bbq at the weekend. A huge hit with everyone. DD does not like bananas but even she ate some after picking out the banana.
chrissa - I've just made this and stopped cooking with 7 minutes to go as it was very dark and very gluggy. I laughed at the instruction to pour it over the bananas because it was more chuck it on spread it out which didn't go well with the biscuit crumb base.
I hope it tastes ok for dinner tonight.
Update - I'm so happy with the way this turned out. The caramel lightened by the time dinner came around and it was absolutely delish. Even fussy DH liked it.
Wonder - I followed the recipe exactly and it was done in no time. We found the pastry a little dry so next time will use a biscuit base as others have but will use chocolate biscuits as I think the subtle chocolate flavour on the bottom adds to the overall taste.

JD, Oh yes, you can say that again! Have 3 kids too!! Am always rushing around like a headless chicken! My three year old is a boy too! Boys are soooo much harder than girls! Good job he is so affectionate and knows how to butter me up! ;D ;D ;D

have to say my boy at 3yo was a CINCH compared to the 3yo girl i have now!!!!!!!!!!!!! think it might be a 3rd child thing more than a boy vs girl thing though bron ;)

Yes of course, if you have the dulce de leche in a jar in the fridge, just poured over freshly sliced bananas and lots of whipped cream ooooh for an every day dessert! ooooh! :P :P :P my mum absolutely loved this dessert, she is trying to work out how she can pinch my THX and take it home with her!

My son was simply a joy as a small child (now a smelly teenager, but still my joy ;)). Certainly a little more physical than the girls, but much happier to entertain himself, whereas the girls demanded far more directed entertainment.

I haven't tried it yet Cookie1 - will decorate it and taste it tomorrow for visitors. The main reason for doing it instead of pastry is it is quicker - I'm a very impatient cook, hate waiting for things to rest.

This is enough for a 20cm tart and four mini tarts.

Hiya,
JD says in here that she soaked the bananas in lemon juice to prevent them going brown but it's not mentioned in recipe. So to soak or not to soak, what would you do ? Tis 10pm here and I'm thinking of whipping this up quickly before bed for a bbq at my brothers tomorrow.

I did that because the pie was going to take so long to get eaten in this house Debbie. Probably not necessary if you think yours will go very quickly. I will often add lemon to the banana in any recipe, a brown banana is not a good look.

Thanks JD, you're a gem as usual. I think I still might soak in a little but I think it will be gobbled up quick tomorrow ! There are other deserts though. I realised too that I don't have any brown sugar so I've used raw sugar, do you think it will still work ? I really hope so, I've got it cooking now for 50 mins, and very loud at this time of night, lucky my kids are heavy sleepers !

I think you really need the brown sugar for this recipe Debbie but if it is underway, there is no pulling out now so let's just cross our fingers and hope for the best. It may surprise us all and actually work, I hope so. I await the next instalment of this recipe ;D

Well, it did set ! But ! I only put 130gm of sugar in total, so maybe that's why (maybe I shouldn't cook this late at night hmmmm). It wasn't enough caramel for the size of the dish though, so I am cooking a second lot now ! Going to be a late night I think. Anddddd I found some brown sugar so this time it is exactly as per the recipe ! I will pour it over the top and no-one will be any wiser (I hope) lol.

Thank goodness for that Lelly. When you said it had 18 minutes to go, I remembered I was thinking mine was never going to thicken either. Of course it thickens more as it gets cold so you don't want it too thick when it's in it's hot stage. It is a lovely dessert, hope everyone enjoys it and the compliments come rushing at you today.

The banoffee pie was a very huge success. Not one piece left ! There were other deserts left over (there was too much as usual), but none of the banoffee pie !!!! It had two layers of caramel a lighter and a darker one. I think somewhere in the middle would have been good so might do say 80 gm brown sugar and the rest raw sugar next time. But ohhhhh so yummy. Brilliant recipe ! My UK relatives loved it ! It's quite a common desert in the UK, but not all that common in Brisbane.
My 15 yo God daughter said if I make her a whole banoffee pie then she will babysit the kids ! Bargain I think !!

Thank you Judy and thanks for your help. I told them all I was up till 1 am lol, they said ohhh it was worth it. I had to make a chocolate cake (made the Bimby chocolate cake) as well and by the time the kids were in bed it just got late starting last night. I usually always make a pavlova for these gatherings, but someone was already bringing a pav, so I decided to do something different, so this was it. I think they might ask for this instead of the pav in future lol. At least I can make it in the Thermomix !

I'm making this twice this week. I'm making one today for a tupperware party to raise money for the kids school fete and then a larger one tomorrow (double of everything) to take to a BBQ. I always do the biscuit base with scotch finger biscuits. This is a family and friends favourite now ........... I'm always getting asked to make this to take to gatherings !! It's soooooo yummmmyyyyyy !

It is really thick Dede. Kind of looks a bit lumpy when you put it on top of the bananas. Always tastes smooth though.

Ok have had some dessert (only a little bit)
I'm not sure if I liked it or not, it was nice but quiet sickly, not sure if I would make it again though. But I can now say I have tried a Banoffee pie. If it was served up to me I would definitely eat it again, but not my favorite dessert.
DH and DS (14) enjoyed it , DD (12) was not feeling well so she didn't try any, DD (9) didn't like it and DS (5) wouldn't even try any.
I wonder if the rest will get eaten over the next few days?

Oh and no disrespect meant for the recipe at all, as it was a great recipe, easy to follow and make.
Its not that I didn't like it, it's more that it's not to my taste, it was still nice, just a bit rich for me.

Yehh it is quite rich Dede, you only have a small slice. I only make it to take to gatherings. One piece every now and again is enough for me. I do really like it though. Everyone who had it last night loved it.

I was just having another read of this recipe. I always make this with a biscuit base but I always bake it (about 10mins at 170 degrees). I think it may change the taste of the base slightly (and I'm only basing this on remembering what the base tastes like on a cheesecake where the base isn't baked). I was checking the recipe and noticed it says to put in the fridge to set. It is quite crunchy after being in the oven and may make the base less rich ???

Wow that's interesting Dede, good to know for future. I always make it at night when the kids are in bed for taking somewhere the next day. Why did you think it was better ? Did it set a bit more / properly chilled ?

I think the banana flavor mixed through more and the overall flavor was much better. I would recommend this to be made the day before eating.

Help!!!
Just trying to make this for DD's birthday tomorrow.
I had the dulce de leche cooking away in the TM, turned my back for 5 mins and when I came back there was a runny sticky mess EVERYWHERE!!! All over the bench and floor, and more of a worry, all over and under the TM.
Has anyone else had this happen? I would really like to make this as apparently it isn't as sweet as the condensed milk versions, but I am afraid to retry.
If I watch it like a hawk and it starts to boil over, how low can I turn the temperature and speed, and still have the mixture go thick and creamy?

I can't play the video on the iPad, but the instructions are clear.
I had turned the speed down to 4 early on as it was spitting from under the lid, so maybe that was the problem. Also Thermomixer's recipe only uses 100ml of cream instead of 200, so might help with the bowl not being so full.
I will try again and hover over it with an eagle eye!

Sue are you sure you used bicarb? And the right amount? I make this dessert regularly and the one time I had an incident like you describe I accidently used baking powder instead of bicarb.

No, I had definately used bicarb. I think the problem was that I had reduced the speed. The dog certainly enjoyed helping to clean up!
I hovered over the second batch, and also had a tea towel over the TM. I think that batch was a bit overlooked, as it was dark brown and very thick and gluggy. It also didn't taste of anything in particular, but by this time it was late and I was really tired so I put it over the bananas anyway and put it in the fridge overnight.
In the morning I intended to scrape it off and have another go, but when I tasted it, it was divine, really caramelly, so I just covered it with whipped cream. General consensus was that it was very scrummy!!
I would definately make it again.

I'm sure it will be fine! That's exactly how my final attempt turned out (see post above).
I was worried about it too, but after sitting for a while it had a really lovely depth of flavour.
If I make it again, though, I will keep checking it and stop cooking when it is light brown and pourable! :D

Yehh mine was lumpy looking too, ok after being in the fridge and once you put the cream on. I always make it the night before and someone above said who tried it the same day weren't very keen and loved it the next day.

I think the reason it went so gluggy and didn't take the full time was because the cream I used is thickened cream. My local Coles doesn't sell pouring cream, only thickened and dollop type
What do you think ?

It certainly did lighten up for you chrissa and proved a success after all your doubts. I don't know about your theory of it being the thickened cream which caused it to be 'gluggy' but it pays to keep an eye on it. I think this is one of those desserts that, once you've made it for the first time, you know what to expect next time. I only use thickened cream in anything, never pouring cream.

We all had a small piece and DD had two but I cut off about 1/3 and gave to DD's boyfriend to take home as his family are much bigger eaters than us. I was going to give them about half but both DD and DH complained, so definitely a hit here. I'm not a desert person so my one little piece last night was enough for me.
