Title: Preserving citrus peel recipes

I am hoping that someone knows a way  to preserve citrus peel.
I have a tiny Buddhas Hand Citron tree that this year has a massive crop on it.
So far I have been picking them and putting in the fruit bowl to enjoy the weird shape and heavenly smell.

But surely they can be used as peel?
Or maybe even preserved like the salted lemon I am reading about on another thread, and that I buy from a lovely indian lady at the local market and now will try doing myself with our lemons.  I thought it was some form of magical treatment that converted them to a delicacy to use with fish.  Now I find it is just salt.

Any help greatly appreciated.

hmm I'm no help to you with the peel request but I have a funny feeling that Quirky Jo had a recipe on her blog using these. Going to see if I can find it  :)

Here  (http://quirkycooking.blogspot.com.au/2010/08/menu-plan-monday-16th-august.html) you go. Seems the recipe wasn't a huge success but Jo does say that the peel can be candied etc so now to hunt out Andies recipe  :D

Wow.   Thanks for looking that up.   :-*  I hadn't even thought of using them as stuffing.  Great idea.
I did a few very unfruitful google searches, and finally found a couple pages that I might give a try.

I have enough of the strange objects to try a few experiments this year, and if they work can expect even more on the tree next year.
I don't think any of the processes can be converted for TC tho   :D

I did candy some several years ago and can't find my notes, but it is similar to candying other citrus peel.

I do remember that I separated the "fingers" as much as possible and sliced them crosswise so I had a lot of discs and then used either a round cutter or my apple corer to punch out the center, leaving a ring of peel which I processed just like any other citrus, i.e., boiling in three changes of water before putting it into the sugar syrup for candying. 

As I recall, I grated the zest off the upper part and cooked it in simple syrup to make lemon zest syrup, which is one way to preserve zest (besides freezing it) and when the zest is strained out of the syrup you have a strongly flavored syrup which I think I gave to a friend for making drinks.

I found the recipe you gave the link to late last night.  So I left it until today to try Have just finished slicing and salting two fruit and bottled and now just have to wait for them.

Thanks for the link to your blog.  Great idea for doing regular citrus.  So much quicker than peeling.

I also found a recipe using chinese traditional spices for a cold remedy and as DH and DGS both currently have the flu am giving it a try.
Smells gorgeous.   I think it may become a regular 'tea' drink even when we are well.

And to think until now I had just been using the Buddhas hands as decoration, and letting DH mow them when the fell of the tree to make the garden smell nice.   :o

Just an update.  DH has had two cups of the Cold Remedy and really likes it.  Not sure if it is helping his cold but it is a great drink...
And even the bits floating around in the cup are yummy.
I'm really loving this Buddhas Hand fruit.

Oh boy ohboy oboy.    That sounds a bit much.    :o   :o 
Taming it down with straight vodka gave me a giggle.

And the name..  Everclear..  Sounds like a drain cleaner.
I think I will stick to candied..  Tho the idea of adding vanilla sounds nice.

DH is currently sipping the first cup of the Chinese Cold remedy I made and he approves.
I have been eating the mix straight out of the saucepan.    :-))
I can't see any more of the fruit being munched by the lawn mower.
