Wow, am I plesantly surprised by this dish! :D
Last night I left the quinoa, mushrooms, soy and boiling water to rest overnight in my thermoserver and this morning had a sniff. Didn't think it smelled very nice and was thinking that I wouldn't like the end result.....Wrong! ;D
What I found at the end of cooking in the TM is that it looked like beef mince in a brown gravy.
The baking dish I used was a Pyrex one sized, 20 x 29 x 5cm deep (2 quart). It was the perfect size.
After the initial cooking in the oven, I then took off the alfoil lid and cooked for a further 10 mins, but it still needed a bit more, so I turned the oven over to grill function and very quickly the top was golden.
Served with a very simple salad, it went perfectly with the lasagne. I actually went back and had a bit more. ;D
A great alternative for a meat free meal. 5/5

Brilliant Julie, this review and photo should encourage others to try the recipe now. I've never used quinoa myself so it does sound interesting, especially as it ends up 'looking like mince in a brown gravy' - can't beat that ;D

This was the first time I'd used quinoa too. Will be quite happy to try other recipes containing it now. :)

Julie that pic is so appetising…much better than the book if I dare say so!!
We had so much trouble with it because I had pre made it and it just looked well….old like me really! HAHAHA

Hi JulieO. Well done on your review and pic. We had the Quinoa and Mushroom Lasagne for dinner this evening and it was amazingly good. Made heaps. Five of us (all adults) were sharing the meal and we still have more than half of it left. 5/5 from our family.

Love the photo. Love quinoa! A coeliac's best friend. I'm going to try this recipe with gluten free lasagne sheets.

I made this last week and DH who is totally a meat man, hasn't stopped raving about it! Making 2 lots today, 1 for my sisters family who has a newborn and the other for hungry husband. Really like this, will make it now in place of normal lasagne. This time I have turboed the dried mushrooms before soaking to save getting them out and cutting them later (im lazy!). Will see if it makes much difference.

This is on my menu for my carnivore dh & cp. ths will be a real test, I bet its great, all Eninas recioare :)

Hally I think I could feed 12 with this recipe , it makes a LOT , I have made three lasagnes one large two smaller, I had to make another batch of bechmale sauce just 1/3 of the recipe , I gave the dried mushrooms a blitz , which was a good idea, only soaked them for about an hour, didn't have extra mushrooms or capsicum so put on 400 gms thinly sliced zucchini , the mixture tastes so good. Thanks for bumping this, I will be making it again.

Thanks AB, might make 1/2 in case no-one likes it. 12 portions is a lot to get through if no-one wants to eat it.

Hally it is nice, very full of flavour, I just had cucumber with it, definitely needs a salad with it , just make half it is worth trying, I was pleased I put in the zucchini, I didn't add the tomato paste I had two tins of tomatoes with basil and herbs.

I have never eaten quinoa, I bught soe but havent used it yet.
