Cooked this for dinner tonight
Absolutely beautiful. Only got the book yesterday so can't wait to try some more recipes.
I added a little cornflour and water paste at the end with the basil and capsicum only because we like our sauce a little thicker, but that's just a personal preference.
Tasted like we were eating at a restaurant. Thanks Tenina.

Had this for lunch today and it passed with flying colours. I have my favourite Thai chicken curry - Nico's version (http://www.forumthermomix.com/index.php?topic=784.0) - but this one is quite different and just as nice.
I prefer using chicken thighs in this type of dish - used 670g cut into large chunks, cooked them for 9 minutes on soft speed, added the capsicum and cooked 2 mins as per recipe. I only used 300mls coconut cream and thickened it with 2 tblspns cornflour mixed with a little extra coconut cream - cooked it for an extra minute after adding the cornflour mixture. I did add a good pinch of salt too.

Beautiful! Made this for dinner tonight...I used chicken tenderloins and did try to thicken with corn flour at the end. Next time I'll reduce the coconut cream also. The flavors were lovely.
DD who just turned 9 loved it and even called out while it was cooking "mmmmmm that smells good"

I made it last night too...the whole family loved it! I was pleasantly surprised as hubby and Miss 4 don't usually like dishes with chilli but they both ate the lot and asked for me to cook it again. I would probably use thigh next time as I prefer thigh over breast in dishes like this, but otherwise it was a very enjoyable meal. Thanks Tenina!

Made this for tonight's dinner & very glad I did :) so easy & tastes like something from an Asian restaurant. I was sceptical that the chicken would be cooked through, but it was & really moist too. It tastes lighter than the usual Thai red or green curry. I added a tsp of kecap manis.
