Title: Coffee and walnut cake

Ingredients
50g walnuts (roughly chopped)
3 tbs instant coffee (dissolved in hot water) or about 20ml of espresso
125g butter
200g brown sugar ( I used palm sugar)
3/4 cup buttermilk
2 eggs
250g plain flour
11/2 tsp baking powder

Icing:
200g icing sugar
2 tbls Golden Syrup
3 tbls espresso or instant coffee
25g butter chopped

Method:
Preheat oven to 180C and grease a ring or bundt tin.

Add coffee, butter and sugar to the TMX bowl and melt 70C / speed 1 / 4 mins until butter is melted.

Add buttermilk, eggs, flour and baking powder and mix speed 5 / 10 secs.  Scrape down sides and make sure it is all incorporated but don't over mix.

Pour half the batter into the tin.  Sprinkle the walnuts over the batter and then top with the remaining cake batter.

Bake for approximately 35 mins.

To make icing, add icing sugar, coffee, golden syrup and butter to the bowl and mix sped 5 / 10 secs.  Spread over cake and top with extra walnuts.

This is a delicious and light cake, the coffee taste is very mild.  Perfect for a morning tea!

dede - Just made this as well. I don't like coffee but DH is eyeing it off. Got to ice it shortly. Nice and easy one to make.

maddy - Completely yummy thanks snappy. I increased the espresso shot to 30 ml for the cake and reduced the espresso in the icing to 20 ml.

Looks good enough to eat, Its to hot here to put the oven on.  Just made some coffee /chocolate custard, waiting for it to go cold, thinking I might put it in the ice-cream maker.

Even though I don't like coffee this sounds great. I think I will make it for my DH.

It's actually a very mild coffee flavor dede. I would say the coffee flavor in the icing is actually stronger than the cake.

I took some cake to morning tea with friends this morning and it was devoured pretty quickly.  I would say this will be a regular along with the golden syrup cake!

Great to know Snappy, I might even try some myself then (maybe without the icing) but I'm sure that my DH and others will love it.

snappy, what do you mean by "3 tbs instant coffee (made up)" ?

do you mean 3 tablespoons of instant coffee (dry coffee no water added)?

Yes I had the same question... but I thought maybe by 'made up' Snappy meant to dissolve it in some (qty?) hot water first?  ???

Didn't get to make this on the weekend as DD made a chocolate cake and a banana cake so will wait till next weekend. Printed and ready to go.

No I have not yet Snappy. I mostly don't eat what I make (cause I know how bad of a cook I am) lol no only joking ;D
I usually leave it for the DH and kids for school/work, but I might just have to have a tiny little piece.

Don't think it's will power cookie. Think it's more like I spend so many hours cooking and want it to last as long as possible before I have to cook more. (usually dosnt last very long though in this house)
I guess at least it must taste good if it dosnt last long :)

I'm glad it worked well for you Cornish Cream! I'm going to make this cake again this week to take into work for an Easter morning tea
