Twice now I have had trouble melting chocolate in the TM where the chocolate has become kind of gritty and very thick, I had to throw both lots.
I made caramel slice today from the lunch box book, instructions were 150g choc and 20g cream (butter or copha) I used cream. Place both in TM cook 3 min at 50 degrees speed 3.
I used nestle dark choc melts.
Any idea why this happens?

Is there any remaining moisture in the bowl or lid that could drip down?

No cookie. I just tried melting it in microwave and the same thing happened with the cream added. Wasted a whole pack of chocolate. So then I melted just chic on its own in microwave with a new packet and had no problem at all. Must be the cream or a bad batch of choc?

Maybe add one or two tablespoons of water .. I often just zap in microwave and it says to add water on packet.. Works every time

Chocolate can be a fine art. Gritty chocolate means that it is burning and separating. It might be worth melting the chocolate first, then slowly incorporated the cream in, but make sure the cream is not cold.
If this ever happens again, you can use a tiny bit of vegetable oil and mix it into the chocolate and it will go back together. I normally add a tablespoon at a time and stir.

I think it was burning, maybe because it was dark chocolate it burnt quicker?
I did try putting a little oil in but it just couldn't be saved. Oh well the kids said it still tasted good.
