Name of Recipe: Mango Passionfruit Cheesecake from Symply Too Good to be True book 5
Number of People: 10 - 12 serves
Ingredients:
12 Highland Oatmeal biscuits (Annette uses 15 but 12 is enough and it leaves 2 packets of 6 unopened for another time)
2 Tablespoons margarine, melted (Annette only uses 1T but I prefer 2 to bind it together better)
2 tspn skim milk
cooking spray
Filling - 3 fresh mango cheeks (300g) - you can use frozen (allow to thaw) or an 800g tin drained well
500g tub low-fat cottage cheese
125g low fat Light Philly
60g icing sugar or equivalent in an artificial sweetener
2 x 200g tubs diet mango yoghurt
1 sachet mango flavoured lite jelly crystals
1 heaped tablespoon gelatine
1/3 cup boiling water (75g)
1/3 cup fresh passionfruit pulp - 3 - 4 large passionfruit
Preparation:
Break the biscuits into the TM bowl and crush for 5 sec/speed 6.
Add the melted margarine and milk and mix together 5 sec/speed 6.
Coat a 22cm spring-form tin with cooking spray, press biscuit mix evenly over the base.
Refrigerate whilst you make the filling.
Clean the TM bowl.
Add the mango, cottage cheese, cream cheese, icing sugar, yoghurt and blend until very smooth 40 sec/speed 8.
Dissolve jelly crystals & gelatine in the boiling water - I then gave it 5 seconds in the microwave. Make sure there are no little bits of undissolved gelatine then, turning the TM to speed 5, slowly add the gelatine/jelly crystal mixture into the bowl. Continue beating for a 10 more seconds once the last of this mixture has been added.
Pour filling over biscuit base and refrigerate until set. I placed it in the freezer for 1/2 hour to give it a head start.
Once set, spread passionfruit pulp evenly over the top of the cheesecake.

Katiej - I choose this cheesecake as it was a lower fat dessert option. Everyone loved it, even after I told them it was made with cottage cheese! I made it in individual bowls, instead of one large cheesecake. I would have liked to put a large swirl of cream on top for decoration, but thought that might defeat the purpose!

Wow Judy this looks so nice. I'm just about to print the recipe. My mum gave me some of the 'Simply To good to be true' books. There is some great recipes in them.

It's nice to have a guilt-free dessert Mandi and this one is a very good one. Even just doing the cheesecake mixture and setting it in nice stemmed dishes would be lovely.

This recipe would be easy to change to other flavors as well. Like raspberry or strawberry or what ever the heart desires. My DH dosnt like passion fruit so I would leave that out. I have quiet a few raspberries in the freezer so will try that with some low fat vanilla youghut with raspberries mixed through. Yum it's making my mouth water thinking about it. Thanks Judy for converting this one.

I made this yesterday for our Easter lunch today at my in-laws. I choose this cheesecake as it was a lower fat dessert option.

Glad it went down well and the cottage cheese didn't put them off. I like individual desserts Katie, no slicing and serving - just help yourselves ;)
