Title: freezing carrots

i have 6 cups of grated carrot anyone ever frozen  for later use in a carrot cake

thanks JD, i will give it ago with only 2 cups and the rest i will make a simple sofrito of carrots,onions and garlic

actually, damn good question. I bought a huge 3kg bag from C*l*s (apparently "juicing carrots") but there was no difference. I have a vacume sealer so I will put it to good use and seal a few packets of pre-made carrots for my fave carrot cake. Thx for asking the question fundj

CP let us know how it goes with the vacume sealer

i was going to freeze mine but this moring i decided against it so i made the sofrito and a double batch of  carrot cake (in the oven now)

Dashingden with this  sofrito   i will use it with risotto
