Sprouted Grain Seed Bread
Makes 1 loaf
Ingredients
175ml warm water
2 teaspoons yeast
1 teaspoon honey
1 teaspoon treacle
50ml orange juice
150g toasted sunflower seeds
175g sprouted grains
25ml sunflower oil
350g bakers' flour
75g rye or wholemeal flour
1½ teaspoons fine salt
Method
Put water and yeast into the bowl. Speed 3 for 20 seconds.
Add honey and treacle. Speed 3 for 10 seconds.
Add juice, seeds, sprouted grains, sunflower oil, flours and salt. :: for 20-30 seconds until combined. You may need to use the spatula to help it combine. You may need to add water, I didn't.
Place in a bowl, cover and leave for 45 minutes.
Prepare a tin about 19 cm long and deep.
Take the dough from the bowl and pat out to about the length of the tin and 3 times the width. Roll the dough up tightly and place seam down into the tin. Press down into the tin.
Leave for about 1 hour.
Bake at 2200 for 20 minutes and then 2000 for 20-30 minutes.
Remove and cool on rack.
This is a very heavy bread, but very tasty. It has lots of grain and seeds in it. It is almost a no knead dough.

I would so like to make this but I wouldn't be able to get the sprouted grains or rye flour here. :-\
ETA Just remembered we are going to Adelaide on the 13th I wonder if I can find somewhere not too far out of our way and get some. Will have to Google and see what I can find out. ;D

JulieO you can sprout your own grain. Wheat is easy. I soaked it over night and then put it in a colander. Everytime I went near it I squirted it and gave it a shake around so that it didn't dry out. When the little sprouts were a couple of millimetres long I used it. I think the rye could be substituted with wholemeal.

Julie there is a stall at the Central Market that sells all bread making products. Chookie visited it when she was last in Adelaide and gave me some things from there. It's called House of Health, stall 73.

Julie, Judy beat me to it. This stall is really worth a visit. They have a great range of different grains and flour. We love the Adelaide market.

Thanks Judy and Chookie. Yes I love Central market too, the smells of the fruit and veg when walking around is just lovely. Might try and make an early visit on Saturday morning before we head home. :)
