I always make sure my water is icy cold. make sure you squeeze all the buttermilk out. You can do this by donning a disposable glove and squeezing, or as I do through a muslin cloth. do at least 2-3 rinses as per the recipe.

I bought 8  DH thought I was mad but I've got 2.5 kg of butter for 18p plus a load of buttermilk :)

what is 2 pence - not like a few pennies? (pence rhymes with cents and it doesn't seem like a lot of money)

OMG that is  cheap.  The cheapest butter in Coles  Cairns yesterday  was $1.90 for 250 gms. In Woolworth's they were tossing out an excess of cream nearly out of date, for $1.70 for 600 mls. I bought all they had and it is in  the freezer  to make butter later when I get bored with my NY resolution to cut down on butter. LOL!

How long will that be Gretchen  :D :D  Trouble with New Year resolutions involving food is that they are so darn easy to break when we love our food and cooking as much as we all do here.

Hi, Gertbysea, was the cream that you bought thickened cream or pure cream, I'm always checking the reduced area of the refrigerator cabinet but have only made butter out of the pure cream.  Woolies this morning also had cheap 600 ml thickened cream I only bought one but can easily go back for a load if it works just as well.

AB, I have only ever used thickened cream for my butter making and have always had success. Always make sure you have some ice-cubes for making cold water - you need a fair bit to give the butter 3 rinses.

Thanks JD and Gert, I will try the thickened cream.  I love the homemade butter I've been making.  Looking after no 9 GS tonight he is just 16 ,months old and into everything,  if I get him to bed soon I might have a go with the 600mls  I have in the fridge.  Unfortunately he had a late afternoon sleep and is still full of beans.
