Hope everyone had a lovely Christmas and relaxing break. I've been making delicious almond milk from time to time but never do anything with the left over almond meal. It sits in my fridge with the best intentions but I always throw it out! Does anyone have some interesting uses for this? Should I somehow dry it out if I'm using in place of regular almond meal in cakes for example? Has most of the nutrition gone into the milk?
And another question - can almond milk be frozen? I'm trying to make smaller quantities because it doesn't seem to last more than 3 days in the fridge, I don't drink a lot of milk but I like to have it on hand because it tastes so much nicer than cows milk.

There are some ideas here (http://drbenkim.com/recipesalmondmilk.html) Viv and then this (http://almondpulp.com/) one claims to have the most pulp recipes on the net.

Thanks JD - almondpulp.com looks good, who woulda thought a whole website dedicated to my excess pulp!

Viv I have a whole freezer (just about) dedicated to my almond pulp as I couldn't bring my self to throw it out and hadn't had the time to research it!! ;D ;D ;D

Faffa it's hard to throw things out! Apart from sweet things, I was wondering if it could be used as mulch or potting mix in the garden, what do you think?

I did contemplate giving it to my worms ;D ;D not sure how it would go as mulch etc as it is still a food stuff that hasn't composted ... it seems so wasteful :-[
