An easy slice for days when its too hot to turn the oven on...
Ingredients:
1 cup dessicated coconut
500g dates
250g butter
60g sugar
1/2 teaspoon vanilla essence
18 digestive biscuits or 3/4 pkt Marie
Method:
Line the base and 2 long sides of a 16 x 26cm lamington pan.
Sprinkle base with coconut, spreading evenly.
Add dates to the TM, 5 secs / Speed 7. Set aside.
Add butter and sugar to the TM, 5 mins / 70o / Speed 2.
Add vanilla and dates and cook 5 mins / 90o / Speed 1 / Reverse Allow to cool for a few mins.
Add biscuits 50 secs / Speed 2 / Reverse.
Pour the mix into the prepared tray, and flatten with the back of a dessert spoon.
Chill until set. Turn onto a wooden board, cut into small squares to serve.
Sprinkle with extra coconut if desired.

That's today here. It's threatening to rain and it's about 34 degrees. So humid and too hot to be in the kitchen. 36 - 37 forecasted for tomorrow and 50% humidity. Think I'll make this one early tomorrow.

As you say good for those hot days. I love dates in all forms. When I bought the fruit for Christmas I shouted myself quite a few fresh dates to nibble on. :D Today is rather warm and it's only going to get worse.

Cookie you will love this recipe. years ago one of my friends gave me a very similar version of this recipe, and recently my mum gave me a photocopy from a "Thats Life" magazine. Today the packet of biscuits literally jumped out of the cupboard and spilt all over the floor (ssh I scooped them up in less than 3 secs ;)). 10 mins later I came across this recipe again in my book of 'to be converted' and seeing as it was quite hot today --- i just took it as a sign that couldn't be ignored. it really is yummy but you don't need big pieces.

I bought dates for this recipe, then couldn't remember what I was going to use them for .....
It's taken me 1/2 hour to find it :-))

Well at least it means I can eat the fresh ones and I lurrrve fresh dates (but MAN! are they expensive!)
Well I need to nip to the shop for dessicated coconut anyway ....
