Name of Recipe: Guisantes al estilo Navarro (Peas Navarre-style) - not tested
Number of People: 6
Ingredients:
1kg frozen peas
1kg wáter
100g white wine
Salt
For the vinaigrette:
4 eggs
200g olive oil
50g vinegar
Salt
Preparation:
Place the peas in the varoma bowl. Reserve.
Pour the water, wine and salt into the *:, set 8 minutes / Temp. Varoma / Speed 1.
Place the eggs in the internal steaming basket, put the basket into the *: and put the varoma containing the peas on top.
Set 10 minutes / Temp. Varoma / Speed 2.
Wait a few minutes before removing the lid, take the peas and pour into a serving dish.
Remove the eggs, peel and cut them (into wedges) and place them on the peas.
Clean the *:, dry it, pour in the ingredients for the vinaigrette and set 20 seconds / Speed 5.
Drizzle the peas with the vinaigrette.

This looks a really interesting way to serve the peas and I'll definitely down load it to my recipe file. I know you won't have tried this recipe, Rosemary, but hopefully one of our more experienced members will be able to answer this question. The liquid in the jug during the cooking of the peas contains wine and salt, but from what I understand, when you use the varoma, the steam from the jug does not 'taste' or affect whatever you have in the varoma tray and, in this recipe, the eggs are in their shells, so they won't be affected by the liquid in the jug. Therefore my question is, what is the reason / advantage of having the wine and salt in the jug?

Hi Cuilidh, I wondered about that as well ;D I could understand it if the peas were cooked in the internal steaming basket, but not the varoma. The only thing I can think of is that the large amount of frozen peas and 1 litre of water may make the peas cook in the liquid eventually. Not sure about this but like fundj I like peas and eggs so will give it a go asap.
Am still playing with my baby, so I agree, more experienced users may be able to answer the question. Some of the recipes in this particular book strike me as being slightly odd and I feel that they need to be tried and tested first. At the moment am just being an automoton and translating but I hope to make every dish over the coming months ???

On thinking about this further, what if you were to cook the peas in the basket and the eggs in the varoma and adjust the cooking time, or even cook the peas in the basket, take them out then cook the eggs?????? Maybe we'll get a few ideas about this from our other members.

Maybe the wine and subsequent steam will give the peas a little bit more flavour girls? It must be there for a reason, cannot think of any other to explain wasting a few sips of good wine ;D
