Title: Rosie's Festive Fruitcake (with pic)

Rosie's Festive Fruitcake
Serves  : 16->20
Ingredients :

Part 1 : Fruit and Nuts

200g Mixed Nuts.  (I used 100gPecans, 50gWalnuts and 50gSlivered Almonds)
150g Macadamias
100g Sultanas or Raisins
200g Glace Cherries
200g Mixed Dried Fruit.  (I used Pineapple, Apricot and PawPaw)
3tbsp Port Wine (I used Muscat)
Combine all of the above in a large bowl and set aside while you do the next part

Part 2 : Batter
Into the  *: TM bowl place
3 large Eggs
150g Caster Sugar
1tsp Vanilla
100g pitted dates
Blend at Speed 5 for around 30->45 seconds. 
The dates need to be well mashed as these help glue the fruit and nuts together while baking.
Add
100g Plain Flour
1tsp Baking Powder
1tsp salt
Blend at Speed 1 for 30->45 seconds

Part 3
Pour the contents of the  *: TM Bowl into the bowl of marinated fruit and nuts and stir well with a wooden spoon until mixed.

Pack the mixture into a well oiled and lined 20cm cake tin and smooth the top. 
Bake at 150o for 1 hour or until a skewer comes out clean.

This looks lovely Rosie. A little more sober than Nola's cake in Chit Chat. ;D ;D ;D ;D ;D

It is really yummy.  With so many nuts it has to be good for me.   ???

I forgot to add that is meant to be skewered all over and drizzled with more port wine,  but as it was cut and being devoured before it reached that stage I decided it was optional.   ;D ;D ;D

You could always have a large small glass of port with it.
