Basically, the heading is my question. I wish to bake some biscuits for Christmas, and I want to do it early, so as not to be too busy at the last minute. Are all biscuits freezable, or only some. If only some, which ingredients would cause a problem to freezing. Thanks all you very helpful people on this forum. ???

I tend to freeze the premade biscuit dough and then just slice off what I need an bake them. I'm not sure which ingredients aren't freezeable though!
I do have a recipe that works for us...but it makes heaps!

very time i do a new cookie recipe i always (most of the time )freeze some dough and a cooked cookie . so far they have all been fine

I always freeze baked biscuits, of all descriptions. I usually throw them, still frozen, into school lunchboxes, or to top up the biscuit barrel at home. I've never had a problem with them. But I certainly don't claim to be an expert on ingredients that might not work.

I think most biscuits can be frozen, however some may need to be reheated when thawed, as they may have gone soft. I would think that those with jelly on the top may not be successful, and those that are iced may not be reheated. Cookie would probably have more ideas on this one.

Would you believe I answered Nola earlier but the post has gone off in cyber space with todays constant thunder and lightning.
I freeze all of the biscuits I make. Filled ones I don't fill until they come out of the freezer. As Chookie says if they become soft you can re crisp them. I often make dough like Ceejay and slice off some and cook. You can make a basic dough and make so many changes to it.

Thanks everyone for your replies. I will cook up a storm before Christmas. I will be doing the Red & Green Shortbreads for sure.That's a great idea Fundj. Unfortunately I don't cook enough biscuits to try it. ;)

This thread has inspired me to try freezing some biscuit dough. Have made this afternoon scrummy lemon cookies (but with orange), Chocolate ripple Biscuits and Cranberry and coconut biscuits. Have cooked a tray of each and will freeze the remainder of the dough. Hopefully the cooking the dough once frozen will be ok as will be so easy to have some in the freezer.

I made my first batch of TMX biscuits today but only cooked 1 tray worth (in case they were duds - forgot the baking powder d'oh! - no complaints so far) so I googled freezing cookie dough, which I've now done. Should have known to check on here first :D

I usually freeze 'logs' of dough, and remove from freezer and slice when par frozen and bake. Have a friend who is a professional cook and she forms the biscuits and freezes on a tray. When frozen she puts them into a zipp plastic bag and sticks them back in freezer. this way you can bake any amount you wish.

I froze my dough in a log as well, but I needn't have bothered. With 2 extra kids here today after school yesterday's cookies are all gone, so I ended up slicing up the log and cooking that as well. It's so hot today the dough defrosted in a few minutes and the cookies have turned out great - and they look very professional too, compared to yesterday's batch. Feel a bit like a super mum, whipping up a batch of cookies within 20 minutes, and while I'm working, too!
