Title: Low Fat Pasta Carbonara

I came up with this tmx variation of a favourite recipe, using a few different other tmx pasta recipes! I was impressed how well it worked !! ;D
Low Fat Pasta Carbonara
Serves 4

Grate 50g parmesan on speed 8 10 seconds and set aside.
Drop 2 cloves of garlic (use one if you don't like garlicy flavour) and 1/2 an onion onto running blades, speed 6. Scrape down.
Add 1 zucchini and chop speed 5 for 3-4 seconds. Scrape down.
Add 20g of olive oil and cook 100oC speed 1, reverse for 3 minutes.
Add 50g of white wine, 550g water, 375ml can evaporated lite milk and 1 tablespoon tmx vege stock.
Cook 10mins 100oC speed 2, reverse.
Add 300g spaghetti, broken into thirds and 175g low fat bacon, cut into thin strips.
Cook 100oC 10 minutes speed 2, reverse.
Whisk one egg well and pour into running machine, reverse, speed 4 for a few seconds.Lower speed is recommended here, say speed 2 - JD, mod.
Pour into the thermoserver and let sit for a few minutes.
Serve with cracked pepper, salt and parmesan.

Leoness79 -  it was a great success with my little boy and big boy! DH even said it was his favourite carbonara ever as it wasn't as gluggy or heavy as others! Definitely a keeper. thanks for this recipe!

Amy - It was fantastic. I used 1/2 of a savoy cabbage instead of the zucchini and also added a couple of good handfuls of mushrooms in with the spaghetti and bacon. I added some frozen peas in the last few minutes of cooking. I did have some trouble with the mixture bubbling over the top. I had to replace the MC with the steaming basket. Did anyone else have this problem? But since I took the MC off, I didn't have to leave it to thicken in the thermoserver afterwards. I'll definitely be making this again. A really great recipe.

RachMel - Amy Mine kept boiling over too and I had to do the same!  Just popped in to see if it had happened to anyone else.  Was yummmmmmo though!

The other night I did 2 batches of this at separate times.
I realised that I only had 1 can of evaporated milk so I put half in each batch and substituted the other half with half a can of cream of chicken soup. Came out awesome once again.

Kimmyh - it was fantastic and so tasty. Added mushrooms with bacon. Had trouble with bubbling over to so reduced temp to 90o with mc off and gave it two extra minutes. Makes a lot and will try freezing some or reducing recipe by half next time. Great recipe  will be a regular in our house. Thank you.

Amy - I added capsicum, peas and mushrooms for more vegies. I didn't have enough pasta so I added some noodles. Then it was so runny that it was like soup, so I've decided that I created a brand new recipe... Vegetable Carbonara Soup. It was still delicious of course!
Update - I made this again, stuck to the recipe this time. We love this dish!

JD - I made this and found it to be very tasty - nice that it's healthier too.

Thanks for this recipe.  I'm always looking for low fat alternatives as I lost a heap of weight a while ago and now it's starting to find me again!!

I was wondering Sonan, how your husband's 40th went?  I hope you had a wonderful time!

It was fantastic !!! I was really happy with all the food.... my naan, I rolled out a bit thin and they went too crispy, but apart from that all good. The coconut sorbet and cardamom biccies were a big hit ! We have made the butter chicken again... it's so good in the thermy !

What number spaghetti did you use? Does it cook al dente in thermomix as I hate soggy pasta?

I made this tonight for mum and SD. It was fantastic ;D

I didn't think the photo would do the dish justice Kim, it's not exactly a pretty looking meal but it is tasty.  Maybe you could just make the sauce and pour it over separately cooked pasta but you would obviously need to reduce liquid quantities a lot. Maybe follow the recipe but forget adding the pasta and leave out the 550g water?  I will be reheating leftovers for lunch today so will probably have to add a bit more liquid and I will take a photo for you  ;D

Here's the photo I promised you Kim, added a bit of cream to loosen the mixture before reheating in the microwave.

I normally cook the pasta seperate as other pasta dishes i hav done in thermie results in overcooked pasta for my taste... So will prob stick with that.. Thx jd..
