Title: Your top cupcake recipe
Post by: Kellie on November 23, 2011, 11:58:01 pm
It's my daughters birthday and she'd like to take cupcakes to school.  Something with a chocolate frosting is her request  ;D

What's your top cupcake recipe?

Cheers

Kellie

I don't make a lot of cup cakes but I have made this (http://www.forumthermomix.com/index.php?topic=4486.0) recipe quite successfully Kellie.
This (http://www.forumthermomix.com/index.php?topic=4426.0) recipe gets rave reviews so check that out too.
Here is the Bimby Chocolate Cake (http://www.forumthermomix.com/index.php?topic=1097.0), the most popular cake recipe on the forum to date.

Ive actually had this cupcake marathon session past month where i made a new kind of cupcake every day. My favorite was with reduced champagne and cherries but the kids liked more the ones with raspberries. Anyway if you want chocolate frosting i guess vanilla is a good choice.

Also do you know of any large quantity cake/cupcake recipes for the TM.  I need to make about 8 dozen cupcakes.  And then ice them.

Thanks -- I will review everything listed here already but just wanted to ask this year's new members as well.

Cheerio and thanks if you can help Kathy and me.

I second the Bimby recipe, makes lots.  Also for a vanilla version, omit cocoa and add 1 tablespoon vanilla extract.
The creamy vanilla frosting is successfully doubled in one batch.
The favourite cupcakes here are cookies and cream....1 batch of vanilla bimby cake, and stir through 1/2 cup crushed oreos.
Once iced, top with some more oreo crumbs, and pop on a mini oreo.

Your cupcakes always look so divine and professional. Are you a professional baker/cake decorator Maddy? I have tried different piping/icing kits and haven't had any luck with any of them. What brand/type do you use?

Thanks in advance.

Gosh no  :P but thank you  :)
I just buy cheap disposable piping bags from eBay, and the tips I use are mainly the Wilton 1M & 2D tips.  The pic above I used the 2D tip, and just swirl it from outside it in  ;)

I've not seen mini Oreo in the shops before. Are they sold at Woolworths or Coles?

Aug 20 is Cupcake Day for the RSPCA.  Anyone using that as a stimulus for cupcake practice?  Nothing like a day dedicated to food.  :)

Maddy do you do your cakes in muffin size or cupcake size please?

You can do either.  If you make the smaller  "patty cake" size, check cakes from the 15 min. mark.
Usually I use the muffin sized papers....so with the bimby quantity, you should get around 17-19 cupcakes.

Thanks. There is usually so much food at this 'do' that I think cupcake size may be best. Some to leave home too.
