Title: Icing sugar grainy
Post by: Tasty on November 23, 2011, 02:21:42 pm
I tried making icing sugar from raw sugar like the instructions say on the fridge magnet but it tasted grainy. I blended longer - same so as a result the icing for a cake i made didn't taste great. What's wrong?

Oddly enough I had that happen the other week. I made icing sugar and thought it was fine, then my wife ate the butter icing and knew that it made been made in the TMX as it was too grainy. Didn't think to ask here , so good on you. :)

Same problem here, I think Judy has had the same.  I buy my icing sugar.

Yes, I buy my icing sugar for the small amount of icing cakes that I do.

raw sugar does not make good icing sugar, white sugar makes better icing sugar

It depends what I'm using the icing sugar for. If it's in a cake or biscuit then I make my own , but for icing I buy it. (and macarons)

I use raw to make icing sugar for icing cakes. I process for longer than reccomended 30sec-1min and also add the cocoa at the same time. I don't find it grainy at all  ??? now.  When I first had my Tm I did though

That must be the secret to fine icing sugar then Meagan - that is a whole lot more time than the card says.  Must try it out for myself, not that I don't believe you but seeing is believing  ;)  Thanks for this info.  :-*

I guess it all comes down to preference JD. Just make sure you stick to the maximum quantities as per the sheet. I think also blending the icing with the butter etc for longer makes a smoother end product too.

Meagan I'll try that next time, as I could not get the raw any finer on it's own

Also make sure your sugar is DRY. If it's at all damp (easily happens during humid weather) the partly ground sugar will cake on the side/top of the bowl and contribute to the graininess. Scrape down a couple of times between spells of grinding. Hopefully you'll have better success.
