Title: the butterfly?

I think I have only used this once - most of the casserole type things I have made I have just done on slow speed on reverse and they have worked out fine.

What kind of recipes would you use the butterfly for as I am not really sure?

Whipping cream, beating eggs. I don't use it very much at all. A recipe usually tells you when to use the butterfly. Remember don't go over Speed 4 with it.

Ricotta, butter,mashed potato.  Never go over speed 4.

I use it for mash potatoes & butter icing.
